Welcome to November! We at the MaineHealth WOW! (Works on Wellness) Program hope you have been enjoying this beautiful golden autumn. In honor of our wonderful Maine colors, we invite you to try the delicious Golden Squash Stuffed with Curried Wild Rice recipe at the end of this email. This dish makes a perfect Thanksgiving side dish.
November offers a time to remember to breathe. This month we can slow down after the hectic activities of the summer and early autumn, and engage in nurturing activities. One such activity is practicing gratitude. This Thanksgiving, practice gratitude with one of the little ones in your life. Begin with a book. RECIPE: Golden Squash Stuffed with Curried Wild Rice

1/2 cup wild rice (try Lundberg organic)

1 cup low sodium vegetable broth

1-2 acorn or butternut squash

1 ½ teaspoons extra virgin olive oil

1 medium onion, diced
-
1 teaspoon curry powder
-
½ pound button mushrooms with caps removed, finely chopped

¼ cup pecans, chopped and toasted

¼ teaspoon salt
-
¼ teaspoon black pepper, or more to taste
1. Cook rice according to package directions, substituting broth for water. Wild rice usually takes about 40-60 minutes to cook.
2. While rice is cooking, cut squash in half and scoop out seeds. Preheat oven to 375. ub inside of squash with a small amount of olive oil, and place face-down on a cookie sheet. Roast for 25 minutes. Remove and set aside.
3. Heat remaining oil in deep saucepan with tight fitting cover. Add the onion, and cook over medium heat until soft. Fold in the mushrooms and curry powder and cook the mixture, stirring, until mushrooms are also soft: about 5-10 more minutes. Turn off heat. Add cooked rice, pepper, salt and pecans and mix well.
4. Turn squash over, and return to cookie sheet. Scoop rice mixture into center of squash halves. Cover with aluminum foil. Cook for 20-25 minutes, or until squash is tender-remove aluminum foil for last ten minutes.
