It has been a stretch since our last newsletter.  Like many of you, we have been adjusting to the world around us and making changes that will ensure our survival.  This has been without question the toughest stretch in my 43 years.  I would simply like to share with you a small collection of sayings and quotes that I have picked up along the way.  These have been helpful to me and I hope they ware to you as well.

We are thankfully entering our celebration of the spring seaon.  The days are getting longer, the sun is getting warmer and the snow will soon be melting.  With this comes sugar season.  Already we have started tapping our maple trees and we are looking forward to the season.  This year, Maine Maple Sunday is on March 22nd.  We will be hosting this event again and look forward to seeing you and your family at our home farm, which is located at 260 Megquire Hill Road in West Poland, right off Route 11.  We will be having a pancake breakfast from 9 a.m. to 3 p.m., hay rides, ice cream with maple syrup, tours of the sugar house and as always, the blue grass band "The Grassholes".  Always a fun event and as always, wear your mud boots as it is the season.
 
Think spring and may you and your loved ones be blessed and protected during these troubled times.

Maine Maple Sunday at our home Farm

 260 Megquire Hill Road in West Poland
 
March 22, 2009
9 a.m. to 3 p.m. 
 
Pancake breakfast, hayrides, ice cream with maple syrup, baked goods & snacks, tours of the sugar house. The blue grass band, "The Grassholes" will be performing as well.

 RECIPE of the MONTH

 Kathie's Roast Beef with Vegetables
 
3 1/2 to 4 pound boneless chuck roast 
1 1/2 cups red wine 
2 1/2 cups water 
4 to 6 potatoes, peed & quartered
6 to 8 carrots, peeled & cut into 2 inch pieces
1 onion, peeled & cut into 6 to 8 pieces 
Salt & pepper to taste
 
The Process:
 
Pre-heat oven to 325 degrees.  Place roast into the center of a roasting pan.  Surround the roast with the potatoes, carrots, onion & bouillon cubes.  Pour red wine & water over the roast, vegetables and bouillon cubes, season with salt & pepper to taste.  Roast for 7 to 8 hours and enjoy!
