A cow's-milk cheese, it normally weighs about 2 kg (approximately 4.5 pounds). Its name comes from the French word molle, meaning "soft". This refers to the softness of the crust when young - with age it becomes harder. It has a gray crust and orangish flesh. The orange color comes from the natural colorant, annatto. Mimolette can be consumed at different stages of aging. When younger, its taste resembles that of Parmesan. Most cheese-lovers appreciate it most when "extra-old" (extra-vieille). At that point, it can become rather hard to chew, and the flesh takes a hazelnut-like flavour.

  

  

Irish Cheddar Cheese with Porter Beer is made from pasteurized cow's milk and is considered a vegetarian cheese because a vegetable rennet is used. It goes without saying that a dark beer is an appropriate accompaniment. Most of you will know this type of cheddar as 'Cahills Porter'.

The blending of cheddar with porter is both striking to the eye and easy on the palate. Pebble-size curds are veined with dark-brown porter beer, creating a rich, marbled appearance. The porter does not overwhelm the cheddar; indeed Cahills Porter tastes only slightly beery, with the porter contributing depth and meatiness to the cheese. Prima Donna is a relatively mild style of a Dutch Gouda cow's milk cheese that is aged for one year. As compared to a four- or six-year Gouda, Prima Donna has a distinctly softer texture and a more subtle flavor. It has an ivory rind with a slight rose blush, a crystalline texture, and a sweet, nutty flavor with a caramel aftertaste. Prima Donna is a versatile cheese for pairing with wines yet it pairs especially well with bigger reds such as Cabernet Sauvignon or Zinfandel. 

Goat cheese with Fenugreek/Coriandor is imported from Holland and it is a mild cheese with a slightly nutty taste. it is a semi hard cheese and it is excellent added to a Greek Salad or paired with a nice wine.
