Pot Luck 

Here at Lyons we are always looking for a reason to party.

Look here for some of our employees best Pot Luck recipes. 

 

 

Julie's

Roasted Artichoke Dip

 (low fat version)

 

2~9 oz pkg frozen artichoke hearts- thawed

2~large garlic cloves (quartered) 1~Tablespoon olive oil

2~Tablespoon lemon juice

1~teaspoon Italian seasoning

1/2~ cup fat free Mayo

1/2~cup grated parmesan

1~ cup grated mozzarella

1~loaf of country bread

 

 

1.  Preheat oven to 350

2. In baking dish, toss artichoke, garlic, olive oil, lemon juice and Italian seasoning.  Cover with foil; bake 50 minutes, set aside to cool.

3.  In large bowl, mix Mayo, parmesan and  mozzarella.  Add artichoke mixture, mashing artichokes and garlic to combine.

4.  Store mixture in an airtight container in refrigerator until ready to use, up to three days.

5.  To serve:  preheat oven to 325.  Place dip in a 9x9 baking dish, bake uncovered 20 minutes until cheese is melted.  Serve with bread to dip.  You may try baked pita chips to lighten it up.

It's great to see you again so soon.  This has always been a very exciting time for us here at Lyons.  The Monsoon is behind us, and now it is that time of year where we focus on giving back to the community that has given us so much. 

 

This month is Breast Cancer Awareness Month and once again Lyons is committed to Making Strides to End Breast Cancer.  Our walking team is assembling and our fund raising efforts are ramping up. 

 

If money is exchanging hands- some of it is going to this worthwhile cause.  We have 50/50 raffles, bake sales, book sales, roof sales (see below) and good old fashioned contributions.  If you would like to help, here is a secret...the La Nues are matching our fundraising efforts up to $2,500.  Woo Hoo!

Admittedly I don't take much in life too seriously.  However, we have all been touched by the C word. It does pack a punch.  

 

We need to care for our wives, mothers, sisters, daughters, lovers and friends. (Hey, men too, just saying) Most importantly we need to take care of ourselves.

Weather Forecast

AccuWeather.com is predicting a fairly dry and pleasant October.  We should finally be cooling down and what I can only describe as Spring Fever will be setting in.  Would anyone understand what I meant if I called it Fall Fever?   If you find yourself wondering how your roof fared through these past summer monsoons, give us a call.  Allow us to prepare your home for the imminent winter rains.  Winter rains tend to be longer soakers and could prove challenging to a storm compromised roof.  If you have neighbors that only spend winters here- don't forget we pay $100 for referrals.
