ACS is still seeking additional volunteers to support the 2011 Conference & Competition in Montr�al. If you love cheese, don't miss this opportunity to work closely with leaders in the industry, and get a behind-the-scenes view of our events!

In particular, volunteers are needed early each morning, and on Saturday, August 6 between the last educational session and the Festival of Cheese. If you are attending conference and might have some time to offer as a volunteer, please contact [email protected].

"Cash-and-Carry" after Festival of Cheese replaces Cheese Sale

Due to Qu�bec regulations on the import, commercial labeling, and sale of competition cheeses, ACS is unable to hold its annual Cheese Sale this year.  Instead, please plan on bringing some cash to the Festival of Cheese on Saturday night. As you lyellow bageave, we'll have grab-bags of cheese ready to go with suggested donation amounts of $10 and $25. Proceeds will support Cheesemaker Scholarships to our 2012 Conference. 

 

Cash-and-carry only, exact change (US and CA funds accepted). Please show your support for this great cause!   

  

Note: To minimize waste, ACS has also arranged to donate excess cheese to Montr�al food banks for distribution to those in need.

 

Certification Exam for Cheese Professionals 

 

Be sure to visit the Certification Exam information table in Room 517A to meet ACS's newest team member, Jane Bauer, Education and Outreach Manager.  You'll have a chance to learn about Certification Exam eligibility requirements, pick up an application form, review the areas of knowledge the exam will cover, and find out how you can be among the first class to sit for the exam next year! 

The American Cheese Education Foundation pins its hopes on you!

At this year's conference, you'll find fun, cheesy pins we hope you'll wear and enjoy.  They also make a great, easy-to-pack gift to bring back home to your whole staff!

We ask that for each pin you'd like to take, you make a donation of $1 per pin (US and CA funds accepted). Proceeds will support the American Cheese Education Foundation to fund cheesemaker scholarships - and help make up for lost Cheese Sale revenues this year. Look for pins and donation boxes near the Registration Desk.

Academy of Cheese

ACS has a few important awards that recognize the valuable contribution members have made over the years to the cheese industry.  The Lifetime Achievement award is one of those, recognizing individuals who have dedicated their careers to the cheese industry.  Another is the Academy of Cheese, which recognizes groups of individuals who worked to achieve a common goal of advancing some aspect of our industry.  

 

This year in Montr�al, ACS will welcome a group of seven distinguished inductees to the Academy of Cheese. These individuals were pivotal in advancing artisan cheese in America. Don't miss the Business Meeting, where they will be inducted into the Academy, and recognized for their valuable work.

It Takes Un Village

 

Hard-working volunteers and staff along with generous sponsors have made ACS's first international conference a reality. We are looking forward to welcoming you to Montr�al in just a few short weeks.  

 

As a small organization with a new staff and management team, we are particularly proud to have developed such a quality program, such great events, and to have consistently found creative solutions to make your Montr�al experience a great one. They say necessity is the mother of invention, and you'll see quite a few changes in Montr�al borne out of necessity. We think you'll be excited to see what the Conference Planning Committee has achieved, and we'll rely on your feedback to see how we can continue to improve the ACS conference each year.   

 

Heading outside U.S. borders is not our only record achievement this year. With 1,676 cheeses entered into competition, we've hit an all-time high! This is just one sign of the amazing growth of our industry, and growth is an issue you'll hear a lot about in Montr�al. The Annual Town Hall meeting will focus on growth, and what it means for the industry, regulators, best practices, ACS, and our Conference & Competition. We hope you'll help us grow a spirited discussion about the directions in which ACS and our industry should head.

Get the Most Out of the ACS Conference 

 

Cheese & Fromage: Common Cultures is about education, networking, and experiencing new places and cultures. To help you get the most out of this year's event, here are some tips for a great conference experience!

 

Educational sessions are on a first-come, first-served basis. 

Look through the Event Guide to select the sessions that interest you most, and always plan to have a second choice in mind should your first choice fill up. Doors open ten minutes before sessions begin.

 

Tasting sessions have limited seating.

To help you organize your schedule each day, tickets for Tasting Sessions will be available each day for that day's sessions at the Registration Desk. Tickets are free of charge, and are distributed one per person on a first-come, first-served basis until each session is filled. Tasting sessions are as follows:

Identifying Flavors, 10:00 - 11:30 am and 1:00 pm - 2:30 pm

Travel Tips & Reminders 

 

Every person traveling to Canada by air from the U.S. or any other country must carry a valid passport. If you are driving to Montral, you may use a Passport Card for identification. The U.S. Passport Card can be used at land-border crossings or sea ports-of-entry between the United States, Canada, Mexico, the Caribbean, and Bermuda.

 

Check with your cell phone carrier to see if you can add a Canadian supplement to your plan while in Montral. Your price per minute for calls and your data rates may be greatly discounted.

 

Canada uses the same plugs and outlets as the U.S., so your electrical items and tech gadgets will plug right in!

 

Your local bank can provide you with traveler's checks and/or Canadian dollars if you'd like. Or, just use your ATM card in Montral to get Canadian cash. For the best exchange rates, make the bulk of your purchases with credit cards.

 

For on-site purchases from ACS (registrations, tickets, etc.) US and CA dollars will both be accepted on a one-to-one basis. The ACS Bookstore is being managed by Appetite for Books, who will accept payments only in CA dollars (cash/credit card). Conference t-shirts are sold through the Bookstore.

Stop by the Registration Desk to sign up for a consultation session with this year's Scholars-in-Residence, Montserrat Almena-Aliste, Ph.D. and Sister Noella Marcellino, Ph.D.   

 

Dr. Almena-Aliste ("Montse") is a dairy specialist and expert on food sensory evaluation. She serves on the technical team of the Vermont Institute for Artisan Cheese. Sister Noella is a Benedictine nun and cheesemaker at the Abbey of Regina Laudis in Bethlehem, CT. She has a Doctorate in Microbiology and will have her microscope available to evaluate your cheese samples.
