It's the season for entertaining - so we have chosen this simple recipe from Udo's book"Omega 3 Cuisine" as a tasty treat for you to make at home!  Of course, our beautiful, sweet garlic goes perfectly with this recipe! Ingredients:1.5 cups chickpeas, cooked and drained (organic tinned is fine)
120ml freshly squeezed lemon juice4 cloves peeled garlic1 teaspoon sea salt1 cup tahini200ml Udo's Oil2 tablespoons extra-virgin olive oilParsley sprigs for garnish
Place chickpeas, lemon juice, garlic and salt in food processor and blend until smooth.
Continue to process on low, adding the tahini one spoonful at a time, followed by the Udo's Oil.
If mixture is too thick, add a little water, oil or lemon juice, according to your taste. Pour into wide serving bowl, drizzle olive oil and sprinkle parsley sprigs over it before serving.  Serve with toasted pita bread or vegetable pieces for dipping!
Makes about 3 cups. "Omega 3 Cuisine" ($34.99) and Udo's Oil (from $26.25) are available from our secure online shopping cart at:

            	| |   Remember the smell of real, freshly crushed garlic - when it first hits the heat in the pan?  Yum!If you are tired of the white, bleached, dry, imported Chinese garlic found in supermarkets you can now spoil yourself with our sweet, delicious-smelling garlic, grown at our biodynamic farm in the pristine foothills of the Barrington Ranges, NSW.  We are proud to present our 2011 crop of organic and biodynamic Hard-neck Italian (pink skin variety) garlic, available now by phone order only.As garlic is naturally a slow growing annual crop, it is only genuinely fresh once a year. The cloves are planted out in Autumn - they finally multiply to a new bulb for harvest in November.

The garlic is then dried in the air to remove excess moisture and form its dry outer protective skin.  Once it is sufficiently dried, it is trimmed and tidied up before being packed ready for dispatch.  The smell is just delicious!    If kept in ideal conditions (cool, dry, dark place - not in the fridge) this garlic should keep until next Autumn!  But it is certainly at its very best right now.       PHONE US TODAY  and we will mail it straight to you!
