We love her marmalades, which have slightly less sugar than traditional recipes, and are full of zesty flavor true to the citrus from which they are made.
Lemon Marmalade with Cardamom & Lavender is full-flavored and quite lemony, with a pronounced bitter edge. The cardamom is subtle, lingering as a warm aftertaste, and the lavender adds a slight, delicate fragrance. In addition to gracing breakfast toast or scones, this marmalade makes a wonderful garnish for fresh goat cheeses such as Coupole or Brunet. For something savory, this Lemon Marmalade makes a delicious glaze for poultry when combined with a little olive oil and dry white wine.
Blood Orange-Hibiscus Marmalade has a complex honey-like sweetness with gentle floral notes. This is a delightful marmalade for baking. Rivka Berg, founder of Wild Pear Company, found her passion for jam making while exploring in her kitchen. Her first discovery: good jam is far more difficult to make than expected. Rivka spent over a decade fine tuning her recipes and processes - resulting today in classic jams of intense fruit flavor. A purist in her flavor palate, Rivka prefers to focus on the bold, clean expression of a single fruit flavor in each jam.
Wild Pear Company Apricot Jam captures the complexity of ripe apricots at their peak, marvelously balancing both sweet and tart flavors. This jam screams for warm toast slathered with salty butter. It also works well in a pork glaze when combined with extra virgin olive oil, ground pepper and a pinch of Maras Chili Flake.
A hint of lemon juice and ginger in the Fig Jam adds a pleasant acidic brightness to the richness of ripe figs. We love to serve this jam on a cheese platter - pairing perfectly with nearly any cheese, although we love it with a blue cheese such as St. Agur.
