Hard Red Winter Wheat Flour
Community Grains Hard Red Winter Wheat flour redefines the industry standard for "whole grain". Conventional mills split the germ, bran and endosperm apart from the grain, mill each separately - then recombine them (sometimes incompletely) to create "whole wheat" flour. Conversely, Community Grains mills their grain 100% in its entirety, never removing the separate elements of the grain. The result is a whole grain flour with far richer flavor and improved performance. Community Grains Hard Red Winter Wheat Flour is an excellent all-purpose flour with a full-bodied, nutty flavor. It is particularly well suited for artisan breads, hearth breads, some pastas and pizza dough. |

Whole Grain Dry Pasta Cuts
Community Grains Dry Pasta are made in small batches from single variety whole grain wheat flours, extruded through bronze dies, and slowly air dried. The flavor and color of each grain variety is expressed beautifully in these pastas. Their texture is equally smooth, not gritty.
- Hard Red Winter Wheat Whole Grain Pasta: Linguine and Conchiglie have a bold, nutty flavor and a reddish tint in color. These pastas pair well with full-flavored marinara sauces or basil pesto sauces.
- Hard White Winter Wheat Whole Grain Rigatoni is similar to red winter wheat in remarkable flavor, but lacking the red color in the bran, white winter wheat is less tannic. This pasta is versatile in sauce pairings. It works well with both intensely flavored red sauces, as well as lighter applications such as sautéed vegetables or a mushroom ragu.
- Hard Amber Durum Wheat Whole Grain Pasta: Fusilli, Wheelies (great for kids) and Pappardelle exhibit a richness in flavor and beautiful golden color superior to that made from standard semolina. These pastas work well with fresh tomato sauces or cream based sauces. Or, when simply dressed with good olive oil, a pinch of sea salt and grated Parmesan cheese, they make a perfect side to most seafood dishes.

Community Grains Organic Red Flint 'Floriani' Polenta is made from a nearly extinct heirloom variety of corn - a close relative of original strains introduced to Europe from the New World several centuries ago.
