Mustard Seed Oil Mayonnaise

In a processor, add egg yolks, Dijon mustard, vinegar and salt. Blend at a medium speed until smooth. Very slowly, add a steady drizzle of Mustard Seed Oil to mixture while blending, until a smooth, creamy consistency is achieved. Adjust salt to taste. Cover and refrigerate. To kick the spice level up a notch, add just a couple of drops of your favorite hot sauce to this mayonnaise while blending.
