Notes from our March 2011 Tasting Panel...

 

The lemony aroma out of the bottle is a bit surprising at first, but as you delve deeper, familiar waves of apple and artichoke fill the nose.  Upon the first taste, you'll notice the butteriness is pronounced - rich and creamy in the mouth, Capezzana this year is delicate in the front with a viscous texture. The finish is on the light side in terms of spice, but the nuttiness is intense and makes it a perfect match for seafood. Try drizzling over seared scallops.  We've also enjoyed it with roasted mushrooms - the earthy flavor balances the high notes of citrus in the aroma and it fully blooms with a little heat.

Primo Grano Pasta


 

This summer will see another harvest of the heirloom varieties of wheat that Gianluigi Peduzzi is attempting to revive in southern Italy. The types of wheat known as Mongibello, Varano and San Carlo were nearly extinct before he began this project - but now, in the warm, windy fields of Abruzzo, they're flourishing.

 

The pasta he makes from these varieties is known as  

Primo Grano. The flavor is more subtle and the texture a little more delicate than the classic Rustichella d'Abruzzo pasta...which is why we're bringing them up this week.  A pasta this sophisticated shouldn't swim in rich ragus - it should be served simply with good extra virgin olive oil, maybe some sliced garlic and a few spring vegetables. 

 

Like the Capezzana, the Primo Grano needs little help to reach its full potential.
