MARINATED MAHI MAHI
 

Ingredients: 

  • 1 lb. Mahi Mahi, skinned

Marinade:

  • ½ cup olive oil
  • ½ cup soy sauce
  • 1 tbsp. onion powder
  • ½ tsp. pepper
  • 2 cloves garlic, crushed
  • ¼ - ½ cup finely chopped onion
  • 8 oz. sliced mushrooms

  Directions: 

  1. Combine marinade ingredients. Wash fish and place in a zip lock bag. Pour marinade over fish and move fish around so marinade covers it.
  2. Place in refrigerator for 1 to 4 hours.
  3. Spray glass casserole dish with cooking spray. Line bottom of casserole dish with sliced mushrooms. Pour fish and marinade over mushrooms and bake in 350° oven until fish is flaky, about 10 minutes per inch of fish thickness.

Clams start out as males. At some point, they decide to become female and switch. Oysters are also capable of changing sexes, sometimes doing so multiple times during their lifetime.

 

A scallop has thirty-five eyes all of which are blue. 

Salmon and steelhead migrate out in the open Pacific Ocean. Some stay close to home while others may go as far away as Japan before turning around and coming back to the river where they were born.

 

For the 10th consecutive year, according to National Oceanic and Atmospheric Administration, New Bedford, Massachusetts is ranked first in the nation in revenue (estimated to be $249.2 million) gained from fish landings. Fishermen and government officials alike attribute the city's cash haul to the sea scalloping industry.
