Cilantro Lime Cod
Icelandic Cod
Icelandic Cod

Ingredients: 

  • 2 pounds cod or flounder fillets
  • 1/4 teaspoon pepper
  • 1 tablespoon dried minced onion
  • 1 garlic clove, minced
  • 1 tablespoon olive or vegetable oil
  • 1/4 cup minced fresh cilantro
  • 2 limes, thinly sliced
  • 2 tablespoons reduced-fat margarine, melted

  Directions: 

  1. Place each fillet on a 15-in. x 12-in. piece of heavy-duty foil. Sprinkle with pepper.
  2. In a small saucepan, sauté onion and garlic in oil.
  3. Spoon over fillets; sprinkle with cilantro.
  4. Place lime slices over each; drizzle with margarine. 
  5. Fold foil around fish and seal tightly. Place on a baking sheet.
  6. Bake at 375° for 30-40 minutes or until fish flakes easily with a fork.

A FISHY FACE LIFT

EPA (eicosapentaenoic acid), which is one of the omega 3's in fatty fish has been shown to preserve collagen, a fibrous protein that keeps skin firm. Also, EPA in combination with the other omega 3's help to prevent skin cancer by reducing inflammatory compounds that can promote tumor growth says studies conducted at Baylor College of Medicine.

These wonderful fatty acids are vital to the health of every cell in your body. They fight free radicals which can damage the skin, cause wrinkles, and lead to the breakdown of the collagen which you need to preserve a firm healthy looking skin. They also help to reduce redness and add hydration to skin. In addition the anti-inflammatory properties are said to help with Eczema, Rosacea and Psoriasis.

 

It is important to remember that your body cannot make Omega 3 fatty acids on its own and they are only acquired through diet. These fatty acids are best absorbed through cold water fish like salmon, herring, sardines, or tuna.
