Broccoli-Stuffed Flounder or Sole
Serves 4

Ingredients: 

  • 2 tablespoons butter or stick margarine, melted
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 5 oz. frozen chopped broccoli, thawed and drained
  • 1/2 cup cooked rice
  • 1/2 cup shredded Cheddar cheese
  • 4 (4 ounce) Flounder, Sole or whitefish fillets

  Directions: 

  1. In a small bowl, combine the butter, lemon juice, salt and pepper. In another bowl, combine the broccoli, rice, cheese and half of the butter mixture. Spoon 1/2 cup onto each fillet. Roll up and place seam side down in a baking dish coated with nonstick cooking spray. Pour remaining butter mixture over roll-ups.
  2. Bake, uncovered, at 350° F for 25 minutes or until fish flakes easily with a fork. Baste with pan drippings; sprinkle with paprika.

FLAT FISH FACTS

There are over 500 species of fish which are considered flatfish. The most popular food fishes of these are flounder, sole, halibut and dabs.

 

This large group of fish has a most unusual growth pattern in its eyes. When a flatfish is born, it has one eye on each side of its head, just like other fish do. As it grows, however, the flatfish turns on its side and begins to swim sideways.

 

Later, it settles on the bottom of the sea, lying on its side, with half of its body covered with sand or mud. As the flatfish continues to mature the eye on its underside shifts position until both eyes are on the same side of its head!

 

Since the flatfish spends much of its life lying on its side on the bottom of the sea, it is pretty advantageous for the fish to have both eyes on the side facing the water. As an added protection, their top skin can change color to blend in with its surroundings. Unfortunately, when a flatfish swims toward the surface in search of a meal the blind side of the fish becomes an easy target for predators.

Flounder is a lean, flaky fish with a mild sweet taste and firm texture. Being a lean fish, the best way to cook flounder is with wine, sauces and other liquids to help keep them from drying out.

 

The color of a raw flounder fillet will range from tan to pinkish to snow white. No matter what color your flounder fillets are when you buy them, they will all cook up pure white, mild and delicious.
