Christmas
VERY EASY BAKED STUFFED LOBSTER
(Our Family Christmas Tradition)

   

Prep Time: 10 minutes

Cook Time: 30 minutes

Ingredients

  • 2 ( 1-1/2 pound) live lobsters 
  • 1 ½ cup crushed buttery cracker crumbs (such as Ritz or Club)
  • 4 Tablespoons butter, melted
  • 1/8 cup minced celery
  • 1/8 cup minced sweet onion
  • he juice of one large lemon
  • Lemon zest
  • 2 Tablespoons grated Parmesan cheese
  • Salt and pepper to taste
  • 1 cup additional sea food such as scallops, shrimp or lobster meat
  • Sweet Hungarian paprika
  • Additional melted butter for serving, optional

Directions

  1. Preheat oven to 400° F.
  2. Place fresh lobster on its back. Using a sharp knife or kitchen shears cut the lobster's body cavity open. Remove and reserve the tomalley (yellowish-colored liver) and roe if you have female lobsters (optional). Remove stomach and intestines, being careful not to rupture them, and discard. (Or ask us to do this for you)
  3. Combine cracker crumbs, melted butter, (tomalley, roe-both are optional but if not used, more butter may be needed to ensure that stuffing is not dry) celery, sweet onion, lemon zest and juice, 1 tablespoon of grated Parmesan, and salt and pepper. Pack the cracker mixture into the body cavity and tail. Sprinkle with remaining Parmesan and dust lightly with paprika.
  4. Bake stuffed lobster in an uncovered 2-inch deep baking pan for 30 minutes. If needed, increase oven temperature to the Broil setting and broil for another 2 minutes to brown stuffing. Serve baked stuffed lobster garnished with lemons and with additional melted butter.

A Christmas Tradition

The Feast of the Seven Fishes celebrated on Christmas Eve by many Italian-Americans is believed to have originated in southern Italy. This feast generally consists of 7 different seafood dishes, while some families have been known to serve 9, 11 or even 13 different seafood offerings. This celebration dates from the medieval Roman Catholic tradition of abstinence and commemorates the "Wait", Vigilia di Natale, for the midnight birth of the baby Jesus.

 

The most famous dish served during the feast is Baccala (salted cod fish). The reason for celebrating with such a simple fish as Baccala is to commemorate the early hardships endured by the people of the impoverished regions of Southern Italy.

Fried smelts, calamari and other types of seafood have been incorporated into the Christmas Eve dinner over the years. The components of the meal are similar for most families, however, as there is always some combination of anchovies, sardines, dried salt cod, smelts, eels, squid, octopus, shrimp, mussels, and clams. In the mix are also pastas, vegetables, baked or fried kale patties, baked goods and homemade wine.  

 

This tradition remains very popular to this day including here in Naples evidently, as we special order and sell large amounts of these fishes here at Captain Jerry's during the Christmas season.
