King Clip w/Citrus Yogurt Sauce

(An Australian "on the Barbee" recipe)

                       Serves 4


Ingredients

  • 4-8 oz. King Clip filets
  • Salt and freshly ground pepper
  • ½ stick of butter or equivalent margarine, melted
  • 8 oz. plain yogurt
  • 3 tbsp. mayonnaise
  • 1 tsp. finely grated fresh lime zest
  • 1 tbsp. fresh lime juice
  • ½ tsp. finely grated fresh orange zest
  • 1 tsp. fresh orange juice
  • ½ tsp. honey
  • 2 tbsp parsley, chopped

Directions

  1. Mix together all the ingredients for the sauce and chill.
  2. Season the fish filets, brush filets with melted butter and place on preheated, oiled grill over medium heat for approximately 10 minutes per inch of filet thickness. Turn only once (See this weeks video for grilling tips).
  3. Serve with Yogurt Sauce. Garnish with lime wedges.

WHAT IS A KING CLIP???

King Clip or more correctly Kingklip is a very popular food fish worldwide with an annual catch of over 50,000 tons. Despite such demand, it is just now gaining popularity here in the United States.

 

Kingklip is a coastal, southern hemisphere fish with most being imported from Chile, New Zealand and Argentina. They inhabit a variety of substrates from rocky ground to soft sand and mud, feeding predominantly on crustaceans, fish and cephalopods such as squid. They are late winter and early spring spawners and successful individuals appear to live at least 25 years.  

 

The Kingklip is an odd looking fish ranking right up there on the "ugly meter" with Chilean Sea Bass and Monk Fish. It has a very big fish-like head and a long thin tapering eel-like tail. It is a deepwater fish that can reach over 5 feet in length and weigh in at over 50 pounds, however the average market size is about 10 pounds.

The flesh of this fish is creamy white when cooked with a slightly sweet, very mild taste and a pleasing firm texture with dense large flakes. It is very high in Omega 3 and Omega 6 fatty acids which make a vital contribution to a healthy diet. It is excellent broiled and baked and is especially desirable for grilling as it stays together very well.
