GRILLED MAHI MAHI
Ingredients
- 2 pounds skinned, deboned Mahi Mahi, cut into serving sizes
- About 3 oz. minced garlic
- 8 oz. Stewed (with green peppers) tomatoes
- 5 oz. ounces shredded sharp cheddar cheese
Directions
- Preheat grill for high heat.
- Place Mahi Mahi in an aluminum foil pan, and toss with the garlic to coat. Distribute butter evenly throughout pan. Spread onions over fish. Pour the lemon juice, wine, and stewed tomatoes over fish. Season with salt and pepper. Tightly cover pan with aluminum foil.
- Place pan on the grill grate, and cook fish 35 minutes, or until easily flaked with a fork. Sprinkle with cheese right before done, just to melt.

Mahi-mahi is a type of fish, of the genus and species Coryphaena hippurus. They frequent warm waters and are typically found in areas like the Caribbean, the South Pacific, and Southern Atlantic. The name Mahi Mahi comes from the Hawaiian language and is appropriately spelled as one word - mahimahi. The two-word misspelling seems to have become more common, however. The word Mahi, means strong in Hawaiian, and was used for this particular fish because they are known for their fighting ability and strength. It's the fight in them that makes them a valuable catch for sports fisherman.
Mahi-mahi, until recently, was frequently called a dolphin fish even though they are not related to dolphins and are not mammals. Since many people have negative associations with dolphin deaths associated with fishing, the name mahi-mahi is now more frequently used in markets and restaurants.

Mahi-mahi is an exceptional tasting fish, with a firm white flesh and a sweet flavor. It is less "fishy" tasting that many other fish, and is prized most by people in the US, Japan and in the Caribbean. The fish has been gaining in popularity because a single fish can yield quite a few pounds of meat and the species is very sustainable.
The Mahi mahi is a very fast growing fish with a growth rate that can literally be measured on a daily basis. In the Gulf of Mexico, Mahi grow at the amazing rate of 5 inches per month. They are truly eating machines that will reach their maximum size of about 5 feet at the end of their short natural life span of about 3 years.
