SALMON POACHED IN WINE

Serves 2-4  

 

Ingredients

  • 1 to 1 ˝ pounds salmon fillets
  • ˝ cup dry white wine (a nice Sauvignon Blanc is good)
  • A few thin slices of yellow onion or 1 Shallot, peeled and sliced thin
  • Several sprigs of fresh dill or sprinkles of dried dill weed
  • A sprig of fresh parsley
  • Freshly ground black pepper

Directions

  1. Put wine, water, dill, parsley and onions in a sauté pan and bring to a simmer on medium heat.
  2. Place salmon fillets, skin-side down in the pan. Cover and cook 5 minutes or to desired done-ness. Do not overcook.
  3. Serve sprinkled with ground black pepper and dill.

They fight free radicals which can damage the skin, cause wrinkles, and lead to the breakdown of the collagen which you need to preserve a firm healthy looking skin. They also help to reduce redness and add hydration to skin. In addition the anti-inflammatory properties are said to help with Eczema, Rosacea and Psoriasis.

 

It is important to remember that your body cannot make Omega 3 fatty acids on its own and they are only acquired through diet. These fatty acids are best absorbed through cold water fish like salmon, herring, sardines, or tuna.
