FRESH TUNA STROGANOFF

 

Ingredients

  • 1/4 cup butter
  • 1/4 cup chopped onion
  • 1 can cream of mushroom soup
  • 1/2 cup sour cream
  • dash pepper
  • 8 oz. fresh tuna, pre-steamed and flaked
  • 1 can (4 ounces) mushrooms, drained
  • Hot cooked noodles, rice or puff pastry shells

Directions

  1. Melt butter in skillet; sauté onion until tender.
     
  2. Combine soup, sour cream and pepper; add to onion.
     
  3. Add tuna and mushrooms; heat through.
     
  4. Serve tuna stroganoff over hot cooked noodles, rice or in pastry shells.

The Yellowfin ('AHI) Tuna

Yellowfin tuna is a species of tuna found in the surface waters and the upper water column of the tropical and subtropical oceans worldwide. It is often marketed as 'AHI, which is the Hawaiian name used for both yellowfin and big eye tuna, whether fresh caught or frozen sashimi grade.

 

Yellowfin stocks world wide are good due to the high reproductive potential of the fish, they are readily available and not in danger of over fishing. Their growth and development are rapid in the early years of life and they reach reproductive maturity between 2 and 3 years of age. Once mature, yellowfins spawn frequently and are capable of repeated spawning almost daily during the summer and fall, with millions of eggs produced per spawning event.

This high population of young tuna is needed to combat the predation of seabirds, dolphins and other animals including cannibalism by the adults of the species. The life span of yellowfin is relatively short, likely to be a maximum of 6 to 7 years. During that time they can grow to almost 8 feet in length and 450 pounds in weight.

 

As a food source, yellowfin tuna is almost a perfect food. It is low in saturated fat and sodium and is an excellent source of protein, thiamin, selenium, vitamin B6 and comes in second only to salmon in Omega 3 fatty acids.
