I want to thank everyone who has been generous in sharing their favorite seafood recipes with us. I have received lots of rave reviews and I know they are most appreciated. Please keep them coming.
I would also like to hear some suggestions on products you would like to see in the store and in our virtual fish market, which is soon to open online. While our space is limited for the time being, we still want to hear suggestions for products and services to serve you better. Please send recipes and suggestion emails to Chris.

Grouper Supreme

The following recipe was originally created for bluefish from the Chesapeake Bay. Bluefish is an oily fish and needs a strong flavor complement like bacon to cut the oil. Grouper, on the other hand, doesn't carry a strong flavor. The bacon, with the other ingredients and Grouper's wonderful texture, makes a great dish.
Ingredients
1 lb. Grouper fillets cut in chunks
¼ cup of flour
1 tsp. salt
A dash of pepper
5-6 strips of bacon
2 tbl. of chopped onion
1 ½ cups of tomato juice
1 tsp. of prepared mustard
½ tsp. of parsley bits
¼ tsp. of garlic, powder or chopped
Directions
1. Mix the flour with the salt and pepper. Coat each piece of fish.
2. Fry bacon until crisp. Remove bacon from pan.
3. Cook onion and fish in bacon fat until lightly brown.
4. Lower heat and mix in tomato juice, mustard, garlic, and parsley. Simmer 5 minutes until sauce thickens and fish is cooked.
5. Serve on rice with bacon crumbled on top.

The annual world fish catch is about 90 million tons. About 75% are salt water fish and 25% fresh water fish. America's Food by Harvey Blatt (2008)
The United States imports about 3 billion pounds of fish each year to meet consumer demand. (2004) USDA 25 years ago large Atlantic Bluefin tuna (250 to over 1,000 pounds) might sell for a penny a pound for cat food, if it sold at all. Today, that same Bluefin tuna can sell for well over $100 per pound, mainly due to the popularity of sushi and sashimi around the world. In 2001 a 440 pound Bluefin sold for $173,600 in the Japanese Tsukiji fish market - that's about $394 per pound!

More than 90% of all fish caught are caught in the Northern Hemisphere.
About 10% of the world fish catch is cod.
E. itajara a species of Grouper, grows so large that some believe it was the great fish that swallowed Jonah, the Jewish prophet of the Old Testament, hence the name "jewfish."
Some Groupers are so huge that when they open their mouths to feed, they create a suction that is powerful enough to inhale small prey.
