Easy Black Bean Soup



1 pound dried black beans (about 2 1/2 cups), rinsed
2 medium onions, chopped
1 large red bell pepper, seeded and chopped
4 cloves garlic, finely chopped
1 tablespoon ground cumin
1 teaspoon ground chipotle pepper
2 tablespoons chopped fresh cilantro
2 tablespoons nutritional yeast
1 tablespoon fresh lime juice
1/2 ripe avocado, chopped


Soak the beans overnight or 6 to 8 hours prior to cooking. Drain and rinse.

In a large pot, bring 1/2 cup water to a simmer over medium-high heat. Add onions, bell pepper and garlic and cook, stirring frequently, until onions are translucent and beginning to brown, about 10 minutes. Stir in cumin and chipotle and cook 1 minute, stirring. Add drained beans and 10 cups water. Bring soup to a boil, then lower to a simmer and cook, uncovered, for 1 1/2 to 2 hours, until beans are tender. Remove 4 cups soup and carefully purée in a blender. Return purée to pot and stir in cilantro, nutritional yeast and lime juice. Spoon into bowls for serving and garnish with avocado.

Keeping Your New Years Resolutions

It's that time of year again when promises of improved health, more frequent exercise, better nutrition and weight loss start to go by the wayside.


On average, most people are committed to their New Year's resolutions for 6 weeks; so by the time Valentine's Day rolls around all beats are off.  Does this mean that we aren't committed to our goals?  Absolutely not!  It simply means that we need to set goals that really matter to us and find support from professionals who will keep us motivated and accountable.


Consider setting goals with the following criteria in mind:

  1. Set goals!  Don't make changes just because it's what you do in January. Be ready to commit.
  2. Create a plan! Don't just vow to eat better or exercise more, determine what steps you'll need to take to accomplish this.
  3. Don't make all-or-nothing resolutions, establish milestones! For example, instead of attempting to exercise every day, commit to 2-3 times a week and gradually increase this goal.
  4. Believe in yourself!  Remember that whatever goals you may not have met in the past have no impact on what you can do with in the future.

Guided Meditation Series
We have heard and read about the benefits of meditation.   We often say "one of these days I will take time to meditate, or I will learn how to meditate properly".  Now is the breathe, de-stress and de-clutter our minds.


Come experience this 4 week session of gently guided visualized meditation facilitated by our resident Acupuncturist and Holistic Practitioner, Nicole Dunn. Surrounded by beautiful and serene music you will experience the benefits of meditation. During this session you will practice the benefits of deep breathing techniques, as well as, learn to calm your mind, find compassion for yourself and experience methods to center, ground and clear your non-beneficial energies.  Bring slippers and water for your comfort.


 Date:  Wednesday evenings, starting March 7th through to March 28th, inclusive
