Champagne

The name champagne is limited both to a defined geographical region and a process, through which  every drop of wine must go before it can claim the name.

It would be claiming too much to say that all champagne is better than any other sparkling wine in the world, but good champagne has a combination of freshness, delicacy, richness, raciness, and a gently stimulating quality that no other wine has ever quite attained.
