Hi Everyone!

 

Fall is here full force and even quite a bit of rain, which seems so early in the year for us here in the mild-lands of climate phenomenons. 

 

I have noticed for myself and have heard from many members over the years, that this is the time we begin to cook more, and spend more time inside, near or in our kitchens. And guess what happens because of that?  

 

I remember a Bloom County cartoon (remember that comic strip?) from years ago, when Steve, the sexist lawyer, says to his girlfriend in response to her query about if she was fat: "Uh, no...you're not fat...." (a nice long pause goes in here). "You chicks store fat in your thighs for winter don't you?" As absurd as that statement is, let's face it. Some of us do seem to have a tendency to bulk up in the colder months.

 

It makes me wonder are we doomed every winter to gain rather than lose because we tend to cook more, have the holiday season in our laps, and just seem to be hungrier as the weather gets colder? And then we can blame the summer months for all the parties, BBQs and lack of structure which other times of the year give us. So does that mean spring and fall are times to lose and the rest of the year forget it? Yikes!!

 

So my solution has been this. Yep, I cook a lot more. But that means I can cook a lot of soup as well as other yummy dishes. Soup generally is a lot more filling for a lot less points. It is so easy to make zero - 2 point per cup soups, and use it as a snack, as well as a meal (not in the same day...I could get sick of a soup pretty easily if I did that). Maybe having a zero point vegetable soup for lunch a couple of days a week, or as an afternoon filler instead of the peanut butter on crackers,  will balance out the apple crisp or leftover Thanksgiving meal. Just a thought...

 

The other life saver for me is the gym. The winter months are colder and wetter and outdoor activities are definitely curtailed, so the gym is a perfect solution. Oh I hear the whines and sighs right now. "I hate gyms...I would never join a gym..." on and on. Well, here's the reality, my wonderful friends. Gyms offer a plethora of options for staying in shape. Besides all the stairmasters, elipticals and stationary bikes, as well as all the myriad weight training options, they offer classes by the carload, as well as a knowledgable staff of trained professionals who can help you figure out how the facitity can best benefit you. Whatever you have made up about joining a gym (there are only 20 something perfect bodies there...It is full of sweaty guys....), I dare you to prove yourself wrong. My gym (Coaches Corner in Sebastopol) has all ages. The teens come in after school, but the rest of the day is filled with a great group: many of whom have become good friends, most of whom are near my age (57) and older, and in various degrees of fitness. I look forward to seeing buddies, and at the same time getting a much more extensive workout then I will get walking with a friend. I used to nay say gyms the way many of you are doing, but I got hooked on a few classes, and found things I like to do there, and it has become a favorite destination.

 

As the season progresses I hope many of you anti-gym readers will venture into your nearest facility and see what is possible.
If you are not willing to consider this I challenge you to figure out some form of activity which you can do inside in a consistent way. It is time to think about what your hopes are for the the upcoming winter season. Is it to gain weight, like the rest of the country does this time of year (7-10 lbs is the average weight gain between mid November and January 1st) or is it to maintain or lose? If it is the latter what steps will you take to make that happen? If you could do an hour of exercise every day, in some way, between now and the end of the year, it will make up for a whole lotta eggnog and pumpkin pie...

LOSE FOR GOOD!

Those of you who have been coming to the meetings know that we have been doing our Lose For Good campaign for the last 6 weeks. As in the past 4 years, the weight lost during this period has been converted to dollars and donated to 2 food banks: one national and one international. In the past 4 years WW has donated 4 million dollars and will donate a million this year as well! We also have been conducting food drives at the centers to add the donations from our members. So this is a big deal! This meeting is about the concept of those words...LOSE FOR GOOD. Come find out what I mean...

SUGAR!!!!!

  Since Halloween is just around the corner, our first major sugar holiday of the season is upon us. This meeting's focus is to begin to understand our addiction to the sweet stuff and to gain some knowledge on how to control our intake of this potentially harmful food.

Jean from Santa Rosa sent a wonderful-sounding and beautiful looking recipe for winter squash, and Mary Lynn from Petaluma told all of us in a meeting about the delicious burgers she likes to make, so I told her to send the recipe...and she did!

A HEALTHIER BURGER  


Ingredients:

¾ lb of both turkey and lean ground beef

10-12 ounces of baby spinach  (cut up after cooking)

Zest of one lemon

3 garlic cloves, minced

½ tsp. salt

¼ tsp. ground pepper

 

Directions:  

Saute spinach in a non stick pan, sprayed with olive oil, until it wilts.  Mix the turkey and ground beef, lemon zest, garlic, salt and pepper well in a medium bowl.  Add the spinach and mix.  Using a ½ measuring cup, make into 6 burger patties, flatten into right shape. I grill them on the BBQ, but I'm sure they will work under the broiler as well.  Don't cook too long.  They are moist and wonderful.  I freeze them, and when they are thawed they take 1.5 minutes in the microwave,  wrapped in a paper towel.

 

Makes 6 burgers   4 pts plus per burger

SPICED SQUASH    

INGREDIENTS:   

1 sm kabocha, kuri or other winter squash, peeled, seeded and cut into 1 1/2 inch pieces.
2 tlbs extra-virgin olive oil
1/2 tsp ground allspice
Pinch of cayenne pepper
Kosher salt & fresh ground pepper to taste
1/4 C fat free yogurt (I use Greek)
1 tlbs fresh lime juice ( I also zested some lime in as well)
1/4 cup pomegranate seeds
1/4 C roughly chopped fresh cilantro

DIRECTIONS:
1. Preheat oven to 425. Toss squash with 1 tlbs olive oil, the allspice, cayenne, 1/2 tsp salt and black pepper to taste in shallow baking dish. Roast til tender, stirring once, 15 to 20 minutes. Let cool slightly.
2. Whisk the yogurt, lime juice, (zest), 1 tlbs water, the remaining 1 tlbs olive oil and pinch of salt in bowl. Transfer squash to serving dish and drizzle with yogurt dressing. Sprinkle with pomegranate seeds and cilantro. Season with salt.

6 servings   2 points plus per serving

 

   

Product Recommendation

 

I don't have a new product suggestion this week...Y'all need to be sending them to me, so I can put some original foods in! But here is one of my very favorites... 1/2 the points of regular peanut butter, very sweet and creamy. This is an ideal peanut butter for making a lower point peanut sauce. 

Trader Joes and Whole Foods are the places I find it.

News report from Bruno , NE In 1981, Herman Ostry and his wife, Donna, bought a farm a half mile outside of Bruno , Nebraska , a small community sixty miles west of Omaha . The property had a creek and came with a barn built in the 1920's. The barn floor was always wet and muddy. When the creek flooded in 1988, the barn ended up with 29 inches of water covering the floor. That was the last straw. Ostry needed to move it to higher ground.

He contacted a building moving company and was
discouraged by the bid. One night around the
table, Ostry commented that if they had enough
people they could pick the barn up and move it to
higher ground.. Everyone laughed.

A few days later, Ostry's son Mike showed his father some calculations. He had counted the individual boards and timbers in the barn and estimated that the barn weighed approximately 16,640 pounds. He also estimated that a steel grid needed to move the barn would add another 3,150 pounds, bringing the total weight to just under 10 tons. He figured it would take around 350 people with each person lifting 56 lbs. to move the barn.

The town of Bruno , Nebraska was planning its centennial celebration in late July of 1988. Herman and Mike presented their barn moving idea to the committee. The committee decided to make it part of their celebration.

So, on July 30, 1988, shortly before 11 a.m., a quick test lift was successfully made. Then, as local television cameras and 4,000 people from eleven states watched, 350 people moved the barn 115 feet south and 6 feet higher up a gentle slope and set it on its new foundation.

The reason most people think that something cannot be done is because they know that they can't do it by themselves. But impossible things can be done if we join togetherin the task. Working together, we can not only move barns, but change the world. 
   

 

The death of Steve Jobs this past week was sad news for so many around the globe. Despite not being a huge "Apple" person I cannot help but be moved by what an enormous impact he had on all our lives. This commencement speech he made in 2005 at Stanford is one of the most inspiring things I have ever heard. See if you don't agree...
