Hi Everyone!
Wow, the weather these last few weeks has made us feel like we're living in Seattle...not our mellow, partly-sunny-even-on-gray-days Sonoma County. This week people have commented over and over again about the rain, and now the sun. Weather seems to affect many of us greatly, in both our moods...and in the level of activity we do. And this presents challenges on both fronts.
Of course if we rely on nice weather to get us moving we will have many months of sparse activity (including, mind you, the summer months of high heat). So those of us for whom walking outside is done when it is pleasant and the timing is right, are probably looking out the window saying to yourself "well, I should get out there now that its nice!". But my guess is many of you are not. Why do I think that? Because I know if I have even a week of sparse exercise my motivation wanes considerably. I think we need to keep moving all the time (really! I think we need to consider being like sharks: always moving or we die) so that lack of movement feels uncomfortable, not the other way around.
So how do we do that if we have only walking outdoors as our activity? You know what I am going to say, don't you? Find an alternative in the gray and hot months. It might be an exercise video, a dance class, joining a gym or Curves...something which can be done no matter what the temperature. Stop using the weather as an excuse, or if you do at least own that it is an excuse, and not that you are subject to nature's whim. You all have control here...
And as far as weather-related mood swings, well, if you want to feel better...get moving!! Physical activity elevates you like nothing else can!
So my message this week is, if you are thinking about exercise but not actually doing it,
its time to get moving!! I challenge all of you to get off the chair and do something...anything, which will energize and enhance your physical and mental well-being.

MEETING TOPICS: WEEKS OF April 3, 2011 & April 10, 2011

GO FOR THE GOAL! I didn't even know the meeting topics when I wrote my blurb above, but guess what? This week we'll be talking about physical activity! I love this line from Dr Seuss: "You've got brains in your head and feet in your shoes. You can steer yourself any direction you choose" That about says it all...
Oh, and I will be leading all of you in a little bit of movement too. Don't worry, nothing radical. But just to get us feeling our bodies and how great it feels to use them!

RECIPES FOR THIS ISSUE
In the market I decided to buy corn tortillas and make fish tacos. You can certainly make this with chicken or shrimp as well.
And I like to bake muffins now and again (if I have a brunch to bring them to...otherwise I eat too many). These are yummy and healthy!

DELICIOUS FISH TACOS
INGREDIENTS
¾ pound skinless firm fish fillets, such as Pacific halibut or striped bass
2 tablespoons fresh lime juice, divided
1 teaspoon ground cumin, divided
½ teaspoon ancho chili powder
½ teaspoon salt, divided
½ cup light sour cream
1 teaspoon chipotle hot sauce, such as Tabasco or El Yucateco
1 (16 oz.) package cole slaw mix (shredded cabbage and carrots)
½ cup chopped cilantro
8 corn tortillas, warmed according to package directions
DIRECTIONS
1) Cut fish into ¾ inch chunks. Sprinkle 1 tablespoon of the lime juice, ½ teaspoon cumin, the chili powder and ¼ teaspoon salt over fish. Toss well and let stand five minutes.
2) Meanwhile, combine the sour cream, remaining 1 tablespoon lime juice, chipotle hot sauce, remaining ½ teaspoon cumin and ¼ teaspoon salt in a large bowl and mix well. Add cole slaw mix and cilantro and toss well.*
3) Cook fish in a large nonstick skillet coated with cooking spray over medium heat three minutes or until fish is opaque, stirring frequently. Serve fish in warm tortillas topped with a little of the cole slaw mixture. Serve the remaining cole slaw on the side
4 SERVINGS 6 PTS EACH
RAISIN BRAN MUFFINS
INGREDIENTS:
1 cup flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp ground cinnamon
2 cups 100% Bran cereal
1 1/4 cups non fat milk or almond milk
1/3 cup firmly packed brown sugar
1 egg
1/2 cup applesauce
1/4 cup raisins
DIRECTIONS: 1) Heat oven to 400 degrees. 2) Mix flour, baking powder, baking soda and cinnamon in a large bowl. 3) Mix cereal, milk and sugar in another bowl; let stand 5 minutes. 4) Stir in egg and applesauce. Fold in raisins. 5) Add to flour mixture; stir just until moistened.Batter will be lumpy. 6) Spoon batter into muffin pan sprayed with nonstick cooking spray, filling each cup 2/3 full. Bake 18 to 20 minutes or until golden brown. Serve warm. SERVING SIZE: Makes 12 muffins. 1 muffin = 4 pts plus |

TRADER JOES BEEF JERKY
This product has become a family favorite because it is so easy to travel with, and we do a lot of biking and hiking. I never used to eat jerky because of the preservatives and sodium but this has very light salt and no preservatives, and at 2 points plus per serving (4 servings in the bag, so not a whole lot of damage to be done if eating a lot of it), even though it is not a power food, it feels as though I am making a healthy choice, because it is all protein and very low in fat.
Also I find this jerky to be quite tender compared to others, so if you do not like really hard-to-chew ones this fits the bill. It comes in original, teriyaki (my favorite) and pepper. There is also a turkey jerky that does not taste as good to me, but my family likes it too.

OMG!!!
There are certain people who make a meeting. You all know what I mean. They are there almost every week, and when they are you can guaranteed to laugh and feel all warm-hearted, They have great ideas and are a great inspiration. Well Sharon Brownlee in the Thursday 10:15 meeting in Santa Rosa is just such a person. Those of us who share the meeting room with her are always entertained and motivated. Sharon got to goal this past week and we are all so proud of her! 33 lbs lighter and looking like a million bucks. Way to go!!
