 Hi Everyone!


 

I love the picture above. Calla lilies, to me, are a wonderful harbinger of spring. They are one of the first flowers to make an appearance in my yard, and when they do they spring into action like they have waited all year for  just this moment. I guess they have, actually. They unfurl carefully, softly, and then, suddenly they are in full frontal bloom: shocking in their beauty and stately presence. Eventually their majesty disappears, sad to say, but they are spectacular gracing my lawn for however long they last.
 

It seems this time of year is when we wait to bloom as well. In the winter we huddle close to the wood stove (and the dinner table) and tell ourselves that "in January I will...". And we do. We clean our closets, meet with our tax man, sign up for the gym, and yep, we come back into the meeting room.  But sadly, like the lilies, we seem to have a short lifespan in this mindset. We get distracted by spring break, or some other event which takes us away from thinking about our goals, and suddenly we are no longer on program, or even thinking about it. Sound familiar?

 

So what if we made up our minds that there was no option but to stay the course? What if we said "this is the LAST time I am joining Weight Watchers"? What would happen then? Would we be like a stately tree rather than an ephemeral flower? Getting stronger every year? 

 

Each one of us is capable of this transition. Unlike the lovely calla lily our destiny is not so predetermined, despite what we make up. We can evolve into the person we want to become by sheer will. 

 

I challenge all of you struggling with this pattern to get serious about this journey. By losing the weight we want to lose we reaffirm for ourselves our strengths, our capabilities and our commitment to evolving in a healthy way. Let's all find the tree within us and let go of the seasonal flower.

STICK WITH IT!

This past week in meetings I ended the meeting with the thought that I hope all of you will be like a postage stamp...you'll stick to this until you get there. I know very few people who have not quit and rejoined multiple times. Why do we do this? What derails us? What is the secret to hanging on when the going gets rough? Come to this meeting and let's explore this important topic.

RED SNAPPER LIVORNESE
 
 

Ingredients:

1 T olive oil

˝ small onion, diced

2 cloves garlic, minced

5 whole (canned) tomatoes, drained and chopped (14.5 oz can)

1/2 can quartered, small artichokes, drained (cut in half if too large) (half of 14 oz can)

2 T capers, rinsed and chopped

1/4 c sliced black olives, drained

1/4 tsp crushed red pepper flakes

˝ T chopped fresh parsley

1 lb red snapper fillets (generally one fillet cut into 4 "steaks")

1 T fresh lemon juice


 

Directions:

Preheat oven to 400 degrees.

 

In a medium skillet, heat olive oil and sauté onion until tender, about 5 minutes.  Add garlic, and sauté for 1 minute.  Stir in tomatoes, artichokes, capers, black olives, red pepper flakes, and parsley.  Bring to a boil and simmer for 10 minutes.

 

Spread ˝ cup of the sauce in a baking dish, and arrange the snapper fillets in a single layer in the dish.  Drizzle lemon juice over the fillets, and then pour the remaining sauce over all.

 

Bake 15 minutes for ˝ inch thick fillets, or 30 minutes for 1 inch thick fillets.  Baste once with the sauce while baking.  Snapper is done when it flakes easily with a fork.

PEAR AND SAUSAGE STUFFED CHILI PEPPERS  

Ingredients

6 LARGE POBLANO PEPPERS

1 ONION , chopped into small pieces
1 RED BELL PEPPER, chopped into small pieces
2 CHICKEN APPLE SAUSAGE, chopped into small pieces
2 BOSC OR BARLETT PEARS, chopped into small pieces
5/8 CUP REDUCED FAT CHEDDAR CHEESE, grated
 
Directions:

1) Preheat over to 350 and spray a medium sized baking dish with spray oil.

 2) To prepare the peppers hold over an open flame until charred and then place in a paper bag to cool. The outer skins will peel off in your fingers. Slit the peppers open and remove seeds and membranes.

3) Spray a large frying pan and saute onions and sausage until brown.

4) Mix remaining ingredients with sausage and onion, except for 1/8 cup of cheese. Stuff peppers with mixture, place in baking pan, and sprinkle remaining cheese over top.

5) Bake at 350 until bubbling and golden: approximately 40 minutes.
 
 

Makes 3 servings (2 peppers). 4 points plus values per serving.

 
             
PRODUCT SUGGESTIONS
 
I thought I might get some resistance from my boyfriend's 13 year old son for serving these non-meat sausage patties for breakfast last weekend, but he ended up wanting to eat the whole package and leave us none! 2 points each and well worth it!

If you think these  non-meat burgers, sausages, etc. are for vegetarians only, think again. Not only nutritionally and point-value wise are they a great choice, but they taste delicious!
