   olympic athletes
 Hi Everyone!
 
A member said something so lovely the other day that I wanted to share it with you all. She said she had been watching the Olympics, and was impressed by one simple fact. Almost all of the athletes that were  interviewed stated that their bottom-line secret to success was just doing the best you can every single day. Just keep plugging along. Some days will be crummy, and some will be awesome, and there will be a whole range of days in between. But no giving up, second-guessing the journey, but simply marching (skiing, sledding, skating?) forward despite injury, disappointments, etc. 
 
 She then said she was "going for the gold", and pulled out her  star-filled bookmark to prove it. Every gold star to her was an Olympian feat. How true!
 
 So when you get discouraged and ready to quit just imagine yourself an Olympic athlete going for it...Every one of you has exactly what it takes to make it happen!

RECIPES FOR THIS ISSUE
It seems like the recipes which are coming into my inbox these days are for appetizers. Dips, pates, etc. So here is one from the Hit the Spot Cookbook, which I LOVE, and a great dip recipe from Cheryl in Santa Rosa: Another yummy treat sampled at the 10am Thursday meeting. Its becoming a regular smorgasbord there!

corn fritters 
 
LIGHT AS A FEATHER CORN FRITTERS
 
INGREDIENTS
1/4 cup all purpose flour
1/2 tsp ground cumin
1 tsp baking powder
1/2 tsp salt
1/4 tsp pepper
1/2 cup lowfat buttermilk
1 large egg
1/2 cup minced yellow onion
1 (14 oz) bag of frozen corn (try the Trader Joes Roasted Corn...truly delish!!)
3 egg whites
Olive oil, and spray oil
 
DIRECTIONS
1) Mix dry ingredients together in a medium bowl.
 
2) Beat egg and mix in buttermilk and onion. Add the dry ingredients and the corn. 
 
3) In a medium bowl, using an electric mixer, whip the egg whites until peaks form.
 
4) Fold in the eggwhites and mix just until blended.
 
 5) Drop from rounded tsp into large non-stick fry pan, coated with oil for the first batch, and spray oil as need for the subsequent batches.
 
Yields: 24-30 fritters, Depending on how many you get from the batch approximately 2 for 1 pt.
 
 
 
SPINACH FETA DIP 
 
INGREDIENTS:                                                                
4c.chopped fresh spinach (about 2 oz)                      1/2c.light cream cheese                                                         1/2c. fat free sour cream                                                1/4c. crumbled feta cheese                                          1/4.c. minced fresh chives, divided                                       2 tsp. fresh lemon juice                                            
1/4 tsp. black pepper                                                          1/4 tsp. salt or less
 
 
INSTRUCTIONS: 
Place spinach in a small sauce pan with 2 cups of water. Bring to a boil over high heat and then cook for 1 min. Drain well.

Put cooked spinach, cream cheese, sour cream, feta, 2 T. chives, lemon and pepper in blender: puree Salt to taste Spoon into bowl and sprinkle with remaining chives.    

3 T=1point. And to make a beautiful tasty presentation serve dip in mini sweet peppers, halved! No extra points and such a great combo!

 Tofu Shirataki Noodles
 
Linda, my lovely receptionist, turned me onto these very cool tofu noodles! They are 0 points, for the whole bag, which is 2 servings! They are pretty bland by themselves, but perfect for a pasta sauce, or anything to flavor them. Boil them slightly, but they are pre-cooked. Remarkably like regular pasta for 0 points!!!
Only seen at Olivers, but here is a link to the website to find them in your area or order them.
 
 
just caesar chicken
 
Trader Joe's Just Caesar Chicken
 
 This is just the perfect chicken for a salad or a wrap. Lightly Caesar-flavored, it is remarkably low in points. Not sure how, but it is 2 pts for 3 oz! It comes in the refridgerator section in a large plastic, celophane covered package. 
 
Two other great TJ's finds...
 Eggwhite Egg Salad: I had the spinach feta flavor, and there is a ranchero flavor too. Quite spicy and tasty, and low low points.
 
Roasted Frozen Corn: Use as you would any frozen corn, (such as the recipe above) but its much more flavorful!

Thomas Bagel Thins
 
I love bagels...no, I luuuuve bagels! But I have them on rare occasions, as they are pretty high in points. Well, Thomas's has made a new bagel thin...1 pt each!! And they have a seedy variety. It isn't the real thing, but it is remarkably satisfying to this bagel-loving woman!

Open Your Eyes...

This is a great science experiment about our perceptions, sent by Karen in Sonoma...
 
Washington, DC  Metro Station: on a cold January morning in 2007. The man with a violin played six Bach pieces for about an hour.  During that time approximately 2,000 people went through the station, most of them on their way to work.
     
After 3 minutes:
 a middle aged man noticed the musician playing.  He slowed his pace and stopped for a few seconds and then hurried on  

4 minutes:
The violinist received his first dollar.  A woman threw the money in the hat
without stopping and continued to walk.
 
6 minutes:
A young man leaned against the wall to listen to him, then looked at his watch and walked away.
 
10 minutes:
A 3-year old boy stopped but his mother tugged him along
hurriedly. The child stopped to look back at the violinist again, but the mother pulled hard and the child continued to walk, turning his head back all the time. This action was repeated by several other children. Every parent, without exception, forced their children to move on quickly.

45 minutes:
 The musician played continuously.  Only 6 people stopped and listened for a short while.  About 20 gave money, but continued to walk at their normal pace.  The man collected a total of $32.

1 hour:
He finished playing
and silence took over. No one noticed. No one applauded.

Findings; No one knew this, but:

     ·The violinist was Joshua Bell, one of the greatest musicians in the world,

     ·He played one of the most intricate pieces ever written,

     ·With a violin worth $3.5 million dollars.

     ·Two days before Joshua Bell sold out atheatre in  Boston where the seats averaged $100 each.
 
This is a true story. Joshua Bell playing incognito in the Metro Station was organized by the Washington Post as part of a social experiment about perception, taste, and people's priorities.
 
The questions raised: "In a common place environment, at an inappropriate hour, do we perceive beauty?  Do we stop to appreciate it?  Do we recognize talent in an unexpected context?"

One possible conclusion reached from this experiment could be this:  If we do not take a moment to stop and listen to one of the best musicians in the world, playing some of the finest music ever written, with one of the most beautiful instruments ever made... How many other things are we missing?
