Hi Everyone!
I was thinking about the topic of our meeting this past week: vegetables and fruits, and mulling over how each meeting seemed to take a different direction, based on members' various favorite (or most despised for that matter) vegetables.
It has inspired me to create an issue based on vegetables, and ideas for cooking them, and various ones to try you may have never explored. I also wanted to feature some of the tips which came out of the meetings on cooking in general. Hope this inspires you to try something new and to make vegetables your friends. I know in my heart this is a key ingredient in making this journey a lifelong one instead of a diet.

MEETING TOPICS: WEEKS OF July 13 & July 19
The week of July 13th the topic is Vacations.
Is it possible to lose weight on a vacation instead of taking a vacation from it all? Find out how this is possible!
And the week of the July 19th we are talking about the stories we tell ourselves around the weather and exercise (too hot...too cold...). Can we exercise in any weather? What are some ideas?

RECIPES FOR THIS ISSUE
Since the issue is about vegetables here are 2 recipes meant for summer. Hopefully some of you will have much of this in your gardens!
The first recipe is from Ellen in Santa Rosa, and the second is a traditional Austrian favorite my mother made frequently. Both are super easy! Enjoy!

Gazpacho
INGREDIENTS:
2 lbs ripe tomatoes, peeled and seeded 1 cucumber peeled and seeded 1/2 each red and yellow pepper, seeded and chopped
1/4 cup chopped onion 3 Tbl minced garlic
3 Tbl red wine vinegar
2 Tbl olive oil salt & pepper to taste 1/2 cup chopped basil
INSTRUCTIONS:
Put all ingredients in a food processor and blend. Refrigerate and serve cold. 4 servings 1 point per cup.
Tomato Cucumber Salad
INGREDIENTS:
1 med cucumber peeled and sliced very thin 3 med tomatoes, sliced thin and cut into pieces 1/4 red onion sliced thin 1 T sweetner (xylitol or zsweet preferably)
1/2 cup seasoned rice vinegar
salt & pepper to taste
2 tsp fresh dill 2 tsp carroway seeds DIRECTIONS:
Mix all ingredients together and enjoy! 0 points!!

A MUST READ BOOK!!!
THE END OF OVEREATING
by Dr David Kessler
Recently I have been hearing interviews with Dr David Kessler, the former commissioner of the FDA, and the man who invented nutritional labels (!!) on NPR regarding his book: The End Of Overeating: Why we Can't Stop Eating. His reasoning is brilliant and his message is a must read of all of us with food addictions!!
In The End of Overeating, Dr. Kessler explains how humans, much like Pavlov's dogs, become hardwired to anticipate foods with fat, sugar, and salt. The food industry has learned what humans want, and is only too happy to give us what we crave. We quickly become trapped in a vicious cycle of dopamine-fueled urges when we want food, and opioid releases when we eat it. If dopamine and opioid sound familiar, it's because they play a major role in alcohol and drug addiction. Dr. Kessler draws a direct connection between food's power over people, and the pull of alcohol and drugs. It truly isn't a stretch to say, "I'm addicted to chocolate." Today's overeating epidemic has yet to result in lawsuits or FDA warnings, but a change in public opinion towards highly salient foods is exactly what the doctor prescribes. Like other public campaigns, education is power, and the first step toward regaining control of our appetites is to read this book. On the day of his book's publication, Dr. Kessler took time from his busy schedule to speak with me about what inspired the book, what he learned, and how we can change the way we think about food.

YUMMY VEGETABLE IDEAS!! In the meetings this week we shared some great ideas for making the world of veges and fruits exciting and delicious. Here are some of the best suggestions:
ROASTING AND GRILLING
All types of vegetables lend themselves to roasting and grilling, including peppers, mushrooms (portobellos are the best!!), onions, squash, asparagus, eggplant, beets, parsnips, and cauliflower.
Spray a roasting pan with oil if roasting. Placed chopped veges on the pan and spray again. Sprinkle with salt pepper and spices and bake at 450 for 20 minutes or so, tossing to brown evenly.
COOKING GREENS
Cooking greens (spinach, beet greens, chard, etc) is very easy. Wash them well and chop. Spray oil in pan or use a small amount of olive oil and heat. Garlic can be cooked first, using fresh chopped or frozen Dorot "Ice cubes" from Trader Joes. Put greens in as garlic is cooking let them cook down. Add basalmic vinegar or other seasonings.
CREAM SOUPS
Making a cream soup is easy by simply steaming vegetables until soft and then pureeing with chicken broth and seasonings. No cream or milk necessary and NO POINTS!!
VEGETABLE TEMPURA
Chop favorite vegetables into chunks and dip in eggwhites (ideally put everything in ziplock bagge which decreases the amount you'll use). Sray or oil coat a cookie sheet and lay them out and bake them at 350 for 1/2 hour or until brown. RAW VEGETABLE PLATTERS
If making a vege platter get creative, as there are many more vegetables besides celery and carrots to create a wonderful, tempting to everyone presentation. Here are some great ideas:
sugar snap peas
jicama
broccoli and caulifower, lightly steamed
minature sweet peppers
olives
canned artichoke hearts
jarred marinated mushrooms
pickles.
DIPS:
Salsa
Fat free ranch dressing made from the packet
Onion soup mix with fat free sour cream
Trader Joes Red Pepper and Garlic sauce

FESTIVAL TIME!!
Many of you know I am the creater and organizer of the Bodega Seafood Art & Wine Festival and it is coming right up. I hope you will take time to check out the website and plan a trip out to the event. It is a wonderful festival which benefits both Stewards of the Coast & Redwoods (the non-profit which works with California State Parks in this region) and the Bodega Volunteer Fire Department. Despite there being typical festival food, you will find many more healthy choices than at a standard show such as this. Check it out!!
