Hi Everyone!
This last meeting we discussed exercise, and how to get a great workout without breaking your budget. Logically walking and hiking were mentioned, and the many many places we have access to in our beautiful county for these activities. Biking was also brought up quite a bit in the meeting rooms, and some inexpensive gym options.  This issue will focus on activities, and give you some great ideas on how to get moving!!

And the week of the June 21st we will be exploring the topic of Time Management. From what I hear at the scale and in the meetings this a badly needed discussion.
 



RECIPES FOR THIS ISSUE

I oftentimes look in my cupboard and "fake it" for dinner with whatever I have. This recipe came out great!
Then a member in Santa Rosa brought in a fabulous sounding companion so here we go!

Mexican Chicken Stew
 
INGREDIENTS:
spray oil
4 cloves garlic, chopped fine
12 chicken tenders, chopped
salt and paper to taste
1/2 onion, chopped
1 red pepper, chopped
1 small zucchini, chopped
1 small yellow squash, chopped
1 carrot, peeled and sliced
1 small can green chilis
1 can corn
1 can fire roasted diced tomatoes
1/2 can black olives, sliced
1 package taco seasoning mix
1 cup chicken broth
 
INSTRUCTIONS:  
Spray a large cooking pot with oil and cook the garlic until transparent. Add the chicken tenders and cook until browned, seasoning them if desired (you can also sprinkle with a little of the taco seasoning mix). Set aside.
 
Spray pot again and add all vegetables and brown. Add chicken back into pot, and add all other ingredients and simmer for 10-15 minutes. Serve over brown rice with warmed tortillas.
  
4 SERVINGS 4 PTS EACH 


Black Bean & Sweet Potato Enchiladas

INGREDIENTS:
2 large sweet potatoes, peeled and diced
1 Tbl olive oil
3 cloves garlic, minced
3 small fresh hot chilis, minced
11/2 cup cooked or 1 can black beans
1 14.5 oz can diced tomatoes
1 Tbl chili powder
2 cups of your favorite salsa
8 lg low carb burrito sized tortillas (see product recommendation below)
1/2 cup finely chopped red onion
 

DIRECTIONS:
 Preheat oven to 400. Arrange sweet potatoes in a single layer on a baking sheet sprayed with oil and roast until tender (about 20 minutes).

Reduce oven temp to 350. Heat olive oil in a large skillet over med heat. Add garlic and chili and cook until fragrant: about 30 seconds. Add beans, tomatoes, chili powder and salt & pepper to taste. Stir in sweet potatoes and simmer for 5 minutes. Set aside.

Individually spoon sweet potato mixture into tortillas and roll up, and place in a baking dish: rolled side down. Top with remaining filling and salsa and sprinkle with onion. Cover and bake until bubbly: about 20 minutes.

Serves 8. Each serving 3 pts.

OUR STATE PARKS!!!

          
 
One of the things we talked about this week in the meeting room was the proposed budget cuts, which will close
ALL THE STATE PARKS IN CALIFORNIA (except for 5: none of which are in our area...). That means SPRING LAKE, ARMSTRONG WOODS, AUSTIN CREEK, JACK LONDON, SAMUEL P TAYLOR...etc.

WALKING, HIKING AND
BICYCLING GROUPS
 
You may like to bike, hike or walk, but do not enjoy doing it on your own. Here are a few ways to share the experience, and get great ideas and inspiration.

NORTH BAY HIKES
I have belonged to this group for years and they go someplace almost every weekend, and do anything from easy walks in Windsor to serious hikes on Sugarloaf. They go to Mt Tam, San Francisco, and take camping trips to Pinnacles, Mt Lassen and other great spots. All ages and skill levels.

I have never taken a walk with this group, but many members love it. Also a group that goes out frequently and has a wide range of ages and skill levels.

This group offers a multitude of group rides, but also offers Safety Classes, which are so important for those of us feeling a little shaky in our riding skills.
