It has come to my attention that many of you do not realize that I create this newsletter FOR YOU! I really love doing it, as I get to use my creative juices, but my ultimate goal is to create an interactive place for you to bring your questions, recipes, ideas, etc. It is a place to get a hit of "oh yeah...I am a Weight Watcher", somewhere in the middle of your week, when you need that reminder.
 
I love hearing from you: good, bad and in between. So type me a note and tell me what you would like to see included here, if I am not doing it, or whatever else you'd like to say. Just reply like you would to a regular email and you will reach me. I look forward to hearing from you!

RECIPES FOR THIS ISSUE
 
oatmeal pancakes 
 
I have been loving this relatively new recipe I discovered for oatmeal pancakes. I published the recipe about 3 months ago, but have changed it since, and discovered all sorts of things you can do with them. These have changed my life!!


 
 
Basic Oatmeal Pancakes


Ingredients:
1/2 cup egg whites or Egg Beaters
1 cup unsweetened applesauce
1 cup rolled oats
1/8 -1/4 cup sweetner such as Zsweet or Xylitol
1/2 cup blueberries, or 1/2 sliced banana, or 1/4 chopped mango (or use your imagination) 


Instructions:
Spray a non-stick cooking pan with Pam or oil heat to medium.
 
Mix all ingredients in a bowl and form 3" or smaller pancakes (make them small: these will be like potato pancakes, so kind of crumbly if too big).
 
Fry until golden.
 
Because these already are sweetened they do not need syrup or added toppings.
 
Makes 18-20 pancakes 3 pancakes are 2 pts. 

Savory Corn Oatmeal Fritters

6 mushrooms, chopped fine
1/4 onion chopped fine
1/2 cup canned corn, well drained 
1/2 cup egg whites or Egg Beaters
1 cup rolled oats


Follow directions for recipe above. Serve with a savory sauce as an appetizer
 
Savory Bean Fritters
 
I can pinto, black or garbanzo beans, well drained
1/4 onion, chopped fine
1/2 cup canned corn, well drained 
1/2 cup egg whites or Egg Beaters
1 cup rolled oats
1/2 cup of your favorite salsa
 
Mash beans well in bowl.
Saute onion.
Mix all ingredients together and follow directions above. Top with salsa or sliced avocado. 

 

5K WALKING CHALLENGE!!


I have heard from a scant few of you regarding signing up for The Human Race this Saturday at Spring Lake. Are there any others who are interested? Please contact me by tomorrow (Monday) if so, and if I do not hear from more of you I may need to scrap this plan. Let's make it happen!
 
And here is another walking option! Sonoma Valley Footrace & Festival is happening on June 20th. It is either a 5K or 10K walk or run, with a festival following! It is a benefit for the Sonoma Developmental Center.

WEIGHT WATCHERS' POTLUCK GATHERINGS!
 
Santa Rosa member Barrie Mason has set a date for the first ever WW potluck!! It is Saturday May 16th at Barrie's house in Santa Rosa. It will be a brunch, and it sounds like a hoot! I will be there and hope many of you will be as well. It will be outside so plan on bringing comfortable clothing and please contact Barrie, letting her know you will be attending!

 Maybe you can advise me on this as I'm really struggling with the "right" thing to do:

My 16 yr. old is steadily putting on more and more weight for the past two years. I'm finding lots of candy and junk food wrappers around her room. She has a new best friend who is extremely overweight.
I'm continuing to model healthy eating, exercise, etc. Am avoiding any mention of her weight/going on a diet... although it is so hard to simply observe from the sidelines.
 
My other Weight Watcher "advisor," has said that she is well aware of her weight gain and it would be worse for me to say anything.
Any advice in a nutshell?

I agree that your daughter is not unaware of what she is doing to her body, and for some reason needs to go this route. It may very well be a rebellious act for her, given how fit and healthy you are. The important thing is to let go of judgement here and let her do what she does. Love her unconditionally. There will be a point where she will turn it around, but you cannot do anything to make that happen quicker.
