Hi Everyone! Today it was over 80 degrees and I am lounging in a sleeveless shirt, shorts and sandals...ah! It is reminder that summer is just around the corner, which is bathing suit and shorts weather. What if this was the year you actually felt great wearing clothes that showed some of your body? How would that feel? I challenge those of you who did not come to the meeting last week (was it Easter or Passover remorse?) and might be thinking of taking the rest of the season off and coming back in the fall, to bail on that thought. Make a renewed commitment to make this dream a reality. I hope to see your smiling face this week in the meeting room!

RECIPES FOR THIS ISSUE
We
are getting into party season: gorgeous gatherings in nature as the
weather gets warmer. Bring healthy and creative dishes to your next
potluck! Here are 2 recipes: the first one from Paulette in Sonoma, and the second from
my favorites collection, which is the easiest recipe I know! Enjoy!
Savory Wild Mushroom Mousse
These tasty little ramekins are especially nice alongside squash and pumpkin dishes, or when you're cook with red wine. Use whatever flavorful mushrooms are in the market, cepes/porcini, pleurottes, or chanterelles.
Ingredients: 4 ½ oz. fresh wild mushrooms 4 ½ oz. button mushrooms 1 tbls butter 1 shallot, chopped 1 garlic cove, chopped 1 cup whole milk 1 tbls potato starch (Streits - Passover food section) 3 medium sized eggs salt and freshly ground pepper finely chopped chervil or chives for garnish
Instructions:
Preheat over to 275 degrees. Carefully spray six ramekins with your favorite non-stick preparation.
Clean mushrooms, chop roughly. Heat butter in a large plan and sweat the chopped mushrooms with the shallot and garlic for about 8 minutes or until the mushrooms re nice and soft and have lost any excess moisture.
In a small bowl whisk the milk and potato starch together. Add the mixture to the mushrooms and boil for about 2 minutes until it thickens slightly.
Remove from the heat and puree in a blender until you have a smooth mixture. While the blender is still turning, slowly add the eggs, salt and pepper and blend for a further 10 seconds. It will be oat meal consistency.
Fill the prepared ramekins with the mousse mixture. Cover with small square of aluminum foil and place in a roasting plan half-filled with hot water.
Cook in the preheated over for 40 minutes or until the mousses are nicely set. Remove from the oven and serve warm, either still in the ramekin or tipped out onto a warm plate. Garnish each plate with chopped chervil or chives. Serve over greens, tomato slices, etc.
Serves 6 ½ Points each
PEARL BARLEY SALAD
2 CUPS COOKED PEARL BARLEY 1 CUP EDAMAME SOYBEANS, SHELLED AND COOKED ½ RED ONION, CHOPPED 1 CARROT, CHOPPED 3 CELERY STICKS, CHOPPED ½ CUP KALAMATA OLIVES ¾ CUP FAT-FREE FETA CHEESE RICE VINEGAR TO TASTE.
MIX ALL INGREDIENTS TOGETHER TO TASTE.
YOU CAN ADD ALL SORTS OF OTHER INGREDIENTS, SUCH AS ARTICHOKE HEARTS, ANY OTHER FRESH VEGES, LIKE JICAMA, PEAS, BROCCOLI, ETC.
THIS IS A FILLING FOODS RECIPE. MAKES 4 SERVINGS. EACH SERVING: 4 PTS.

5K WALKING CHALLENGE!!

Those of you who came to meetings this past week know that Weight Watchers is asking its members to make a commitment to sign up for a 5K walk which will happen during the summer months, and to begin training for it right now through June 6th. I am asking the members in my meetings who are feeling motivated to sign up for a walk and commit to training for it with fellow members, including me! We will form the Janet Walkers, or something like that (help me out here!!)
There do not seem to be a whole lot of choices in walk/runs in our immediate area. Here is the link for the Human Race, which is May 9th, so quite soon: click here. I think this sounds like a great one to sign up for so here is how I think we can make it work...

WEIGHT WATCHERS' POTLUCK GATHERINGS!
Santa Rosa member Barrie Mason is organizing once-a-month potluck gatherings at different locations each time. I think this is a wonderful idea, and hope you will think so too!
If you would like to volunteer your home for one of the gatherings, Barrie will do the rest, or if you want to come and make a point-friendly dish please email Barrie and let's make these happen! YUM!

Healthy Thoughts/Healthy Actions
I need your help!!
I am planning to do a special workshop on healthy cooking and meal planning. It will be for both parents and kids over 10, with the idea of getting the whole family involved on a journey of smarter choices. The cost will be very reasonable and the benefits for everyone will be enormous!
I am looking for a location to hold this workshop. Ideally I seek a large house with a big kitchen, and lots of space to host up to 25 people. If you are willing to donate your space for this you will of course get the workshop for free for yourself and family members. Please let me know soon if you have a location available.
