Happy March Everyone!
As I look out my window the sun is shining and the grass is so green it glows. Mustard is popping in the orchard: a vibrant yellow that screams spring. We are just on the outer edges of the official spring equinox and there cannot be a more glorious time of year in my book.
I hope all of you are reveling in the beauty of this gorgeous place we live in by spending time out in nature in some way. Walking, hiking, kayaking, gardening, or just sitting on your deck and having a lovely glass of water while you watch the grass grow.
And just as that grass is sprouting, may your thoughts sprout and access the wisdom inside of you, which tells you to nourish your body and spirit in healthy ways. |

MEETING TOPICS: WEEKS OF
MARCH 8 AND MARCH 15, 2009

The week of March 8th we are visiting the realm of exercise. We will be brainstorming on ways we can incorporate more into our daily lives. Those of you challenged by exercise please come for the inspiration, and those of you already active please come and give other members ideas and encouragement!
And the week of the March 15th we will be talking about the Feeding Your Soul, Not Your Taste Buds. I know that most of you will get a lot out of this topic so please plan on attending.

RECIPES FOR THIS ISSUE
Here are 2 recipes sent in by members, both of which sound divine!
This recipe was sent by China in Santa Rosa...
RED SNAPPER WITH SPICY CITRUS SALSA AND SPINACH

2 large navel oranges, peel and pith removed, flesh cut into segments 1 medium lemon, peel and pith removed, flesh cut into segments and chopped 1/2 small shallot thinly sliced 1/2 habanero chili, stem, seeds and ribs removed, finely chopped. (WEAR GLOVES!!) 1 Tablespoon coarsely chopped cilantro Zest of one lime , plus 1 tablespoon fresh lime juice 1 Tablespoon extra virgin olive oil 1 teaspoon honey 1/4 tsp coarse salt 1/4 tsp freshly ground pepper 4 red snapper fillets, skinned (each 4 ounces) 4 ounces baby spinach (about 4 cups)
1. Toss oranges, lemon, shallot, chili, cilantro, lime zest and juice, oil, honey and 1/8th tsp each salt and pepper in a bowl. Let stand at room temperature gently stirring occassionally.
2. Poach the snapper fillets which have been seasoned with the remaining salt and pepper until fish is just cooked through but not overcooked.
3. Steam the spinach until it is bright green and just wilted.
4. Divide the spinach among four plates. Top each with fish and 1/2 cup salsa and serve the remaining salsa on the side.

This is a recipe from Barrie in Santa Rosa...
THAI GREEN BEAN SALAD
1/2 lb green beans, trimmed, chopped into pieces 1-2 tsps Thai Kitchen Red Curry Paste 1 small head red leaf lettuce, cleaned and chopped 2 oranges, peeled, sectioned and chopped
Steam green beans until tender and then run under cold water to stop cooking.
Mix beans with curry paste and use as much or as little for desired spiciness.
Mix together all the rest of the ingredients and enjoy.

PRODUCT RECOMMENDATIONS
PATAK'S CURRY PASTE
The recipe above calls for a curry paste. I could not find A Taste of Thai picture of their curry paste, so put this photo in, which is the brand I use. I have always loved curry pastes, which allow you to create authentic Thai spiced dishes without any work at all. And even though there is a fair amount of oil in these pastes, this only adds about a point to anything you make with it.
NEWMAN'S OWN PEANUT BUTTER CUPS
I know it is strange that I would recommend chocolate in a Weight Watchers newsletter, but those of you who know me know I am a chocoholic and have it every day.
I have found this company makes wonderful peanut butter cups, in both milk and dark chocolate versions, as well as carmel and peppermint cups, and the entire package, with 3 delicious, nice-sized cups, for 3 pts, or 1 pt for each cup! Definitely a great point value for delicious, real chocolate.

WEIGHT WATCHERS' POTLUCK GATHERINGS!
Santa Rosa member Barrie Mason is organizing once-a-month potluck gatherings at different locations each time. I think this is a wonderful idea, and hope you will think so too!
