Hi Everyone!

Wow, a new year, new government and, hopefully, new resolutions for ourselves, to get healthier and happier in 2009. So how will we do this?
We could start by coming back to the meetings, if you have been lax in doing so. If there is one step that is a likely bet to get you moving towards your goals, it is walking through the door of a meeting room.
And those of you coming but still struggling with keeping your resolutions, one you can keep is being patient and kind with yourself, as you would a good friend or loved one. Know that there will be a point at which motivation takes over, and you will shift your current patterns, but right now applaud yourself for simply being at a meeting every week. You are doing great!
So happy 2009 everyone, and may we all see our goals and dreams come to fruition very soon!

RECIPE FOR THIS ISSUE
I decided to print one of my all time favorite (and easy) recipes I serve to guests. The original version is from the In One Pot Cookbook, which WW put out several years ago. My recipe adds a unique ingredient, which makes this extra delicious!
HALIBUT BRAISED WITH TOMATOES, OLIVES AND CAPERS
|
|
Serves 4 Points 4
1 tsp olive oil spray oil 1 onion, chopped 2 garlic cloves, minced (or 2 Dorot frozen garlic squares*) 2 celery stalks, chopped 1 tsp fennel seeds, crushed 1 14 oz can diced or stewed tomatoes, chopped but not drained 2/3 c Trader Joes Red Pepper Spread with Eggplant and Garlic* 1/3 c vegetable or chicken broth 20 pitted Kalamata olives, halved 2 T capers, drained salt and pepper to taste 1 1/4 lbs halibut, skin removed
Heat the oil and saute the onion, garlic, celery and fennel seeds until transparent and soft.
Stir in the tomatoes, red pepper spread, broth, olives, capers, some of the salt and pepper, and bring to a boil.
Reduce heat and add halibut, seasoned with the remaining salt and pepper. Spoon sauce over halibut and simmer for 10-12 minutes or until fish is just cooked through. Do not overcook.
Serve over a healthy grain, like quinoa, bulgar or brown rice.

PRODUCT RECOMMENDATIONS
ROASTED RED PEPPER SPREAD WITH EGGPLANT AND GARLIC.
This picture is a bit confusing, as the name of the product is not Pinjur. It used to be (or Pinjur is very similar), but it looks almost identical, and is sold at Trader Joes. It is Roasted Red Pepper Spread. I find this to be universally useful. It is used in the recipe above, but try it as a dip for vegetables, a spread for sandwiches, or use it in soups for a zingy taste.
DOROT FROZEN GARLIC CUBES
Trader Joes is also the store to find these wonderful frozen garlic mini "ice cubes". Just punch a couple of these little cubes into a non-stick, or oiled pan and melt, and add any ingredients just as you would regular garlic. Very fresh, delicious garlic without the hassle. This company makes a wide variety of herbs this way, but Trader Joes carries only the garlic, cilantro, basil and parsley.
