I have missed you all these past couple of weeks, as I have been dealing with a back and sciatic nerve injury. I am getting better and look forward to being back in the meeting rooms this week!

I hope you all had a wonderful Thanksgiving holiday and even though you might have over-indulged (it happens to the best of us!), please don't use this as a reason to skip a meeting this week. By continuing to come to meetings during this season you are saving yourself a lot of unwanted extra pounds. I look forward to seeing your smiling faces and hearing your holiday stories!

And the week of December 7th we are introducing the new program! I will not give you any information here, except a subtle clue...It combines the best of Flex and Core. Come find out how it works!
RECIPE FOR THIS ISSUE
 
The discovery of this recipe has changed my breakfast time forever! This is a Core pancake recipe, but even if you are doing Flex you must try these!

Cottage Cheese and Oatmeal Pancakes
 
 
INGREDIENTS:
 
2-3 beaten eggs (I use 1 egg and 1/3 cup egg substitute)
1 cup fat free cottage cheese
xylitol or zsweet to taste (1/4 c?)
1 cup uncooked rolled oats
1 tsp of baking powder

Optional ingredients:
banana, mashed
a sprinkle of cinnamon
a splash of vanilla
blueberries
 
DIRECTIONS: 
Using a blender, put the ingredients in, in the order they appear,otherwise the mixture will be chunky (but I have made this just with a fork to stir it and like the chunkiness). So, eggs in first, then start the blender. As it's blending, pour in the cottage cheese, then the banana or whatever sweeteners and spices you like, then the oats. Once this is nicely blended, cook as you would pancakes, in a nonstick pan (or use spray canola oil) over medium-low heat. Make them small so a spatula fits under them easily as they are more like a potato pancake, so come apart. No need for syrup, as they are sweet and delicious as is.
Makes 10 pancakes 2.5". 1-2 pts each (depending on use of banana or other fruit)These are Core!

I am panicing! My husband is taking me on a cruise over the Christmas holiday and I have no idea how I will keep from gaining weight. Please give me some ideas of what to do!!

Your fears are understandable, given the things we have heard about cruise ship foods over the years. But recently seeing many members come back from cruises having actually maintained, or lost weight, has piqued my curiosity. It turns out the cruise lines are well aware of the fact that people are looking to eat in a more healthy way and have multiple menus to choose from. They also have wonderful exercise facilities, so a combination of wise choices and lots of activity seems to be the secret. My vacation advice is as follows:

1) Have a healthy, low point breakfast, like an egg-white vege omelet, a cup of fruit and a dry english muffin

2) Graze for lunch. Vegetables and fruits and maybe some meat or cheese in moderation, or a light, non-creamy soup.

3) Save the big bang for dinner, allowing yourself 1-2 glasses of wine, a shared dessert, maybe the dinner rolls, or another indulgent treat.

4) Get moving whenever possible. Walk the full deck every day. Walk when you get to the ports, instead of taking taxis. Use the pool, and use the gym. Dance all night to the band!

You will come back relaxed, refreshed and I suspect, a little lighter. Have a great trip!!
