my pic dec 07Hi Everyone!

We seem to be deep into fall already. The vineyards below me have all turned gorgeous shades of orange and gold, and the apple orchard is turning and rapidly dropping its leaves. The weather has been glorious during the day, and nippy at night. Its time for soups, so we will focus on them for this issue.

We will also have the opportunity to see some pretty mind-blowing before and (not quite) after pics and get some info on where to dance locally. Lots of good stuff for this issue so keep on reading!

Late October

The week of October 19th the topic looks at hunger and asks, "What Are You Really Hungry For?". Good question...let's explore it together!

And the week of the 25th we will be delving into meals and snacks, and how to make them more satisfying.

Both are great topics, so hope to see you in the meetings!

RECIPE FOR THIS ISSUE
It is officially soup season so here is a delicious recipe (courtesy of Christine in Santa Rosa, who is pictured in our before/after section below) and the Garden Vegetable soup ideas are from all of you, when we had our soup meeting 2 weeks ago.

Spicy Black Bean Soup
The key to thickening this soup without flour is to puree some of the beans before cooking it!

Ingredients:
spray oil
1 onion, chopped
4 garlic cloves, chopped
3 - 15 oz cans black beans, undrained
1/2 red pepper flakes
1 tsp cumin
14 1/2 oz fat free chicken broth or vegetable broth
10 oz canned or stewed tomatoes
1 8oz can green chiles, diced
11 oz canned corn, drained

Instructions:
1) Spray large cooking pot with oil
2) Cook the onion and garlic 5 minutes, until soft, but not brown.
3) Place 1 can of beans in the blender, add sauteed onion mixture, red pepper flakes and cumin and blend on high until smooth, about 30 seconds. Pour mixture back in pot.
4) Place second can of beans in the blender with chicken broth and bland until smooth. Add to pot.

5) Put last can of beans, tomatoes, chile and corn into pot, and bring to a boil, simmering for 20-25 minutes.

Makes 8 servings. Each serving is 4 pts. This is a Core recipe.

Before and Now...wow!!

Christina Izard (who gave us the delicious recipe above!) came to my Santa Rosa noon meetings only a few months ago, having already lost over 90 lbs. She has subsequently lost another 30, and is now at just over a 120 lb loss!!! Way to go, Christina!! She is well on her way to goal, and is an incredible inspiration to us all.

You do not have to be at goal to submit before and now pictures. please email them to me (simply reply to this newsletter) with a little information about your journey.
