I am both exhausted and elated,
having just returned from a wonderful hike all around Angel Island! Have you
ever been? If not, all I can say is "wow"! It is not only beautiful and rugged,
and the hike is a good 5 mile trek, but the views...oh my!! At every turn you
are looking at the bay, the sailboats, the luxury Belvedere and Tiburon digs. It
is just spectacular!
I went with my hiking group: North Bay Hikes. They do a hike almost every
weekend somewhere, and occasionally do a camping trip as well. These are great
folks: mostly in their 40's - 60's (some are

Meeting Topics: Early October
'Tis the season...for soup! The first week of October we will be exploring the world of soups. We will talk about how we make our basic garden vegetable soup our own unique ways, and other soups we like to prepare as the fall brings the chillier temperatures upon us.
And the second week of October, in honor of Columbus Day, we will be sailing on a voyage of discovery. What does that mean exactly? Guess you'll have to come to the meeting and find out!

RECIPE FOR THIS ISSUE Last issue I introduced figs as the product of the week, and one of our beloved Sonoma members brought a huge basket of gorgeous figs for the group to try. Lo and behold, avid fig haters actually tried them (not without great coaxing mind you...), and admitted to liking this under appreciated fruit! So I decided a fig recipe was in order.
 Spicy Fig and Apple Chicken
Ingredients: spray oil 1 tsp olive oil 1 lb skinless, boneless chicken breasts, chopped in chunks 1 onion, chopped 2 Tbl minced fresh ginger 2 garlic cloves, chopped 2 tsp cinnamon 2 tsp cumin
1 tsp red curry paste (optional: I like Pataks: see below)
1 cup fat free chicken broth 1 med orange, juiced and pulp chopped in 1 bag baby spinach, chopped 10 small, or 6 large figs, chopped in small chunks
2 fuji, golden delicious, or other firm apple, chopped in chunks
1 cup whole wheat couscous, cooked according to package directions
Instructions: 1) Spray dutch oven, or large cooking pot with oil 2) Brown the chicken and set aside 3) Heat the oil and brown the onion, ginger, and garlic, stirring frequently. Add the cinnamon, cumin and curry paste and stir constantly for about 1 min. 4) Stir in the broth, orange juice and pulp, spinach, figs and apples, and bring to a boil. Add chicken back in and simmer. 5) Serve over whole wheat couscous.
Makes 4 servings. Each serving is 6 pts. This is a Core recipe. |

I am excited to announce I am starting a new meeting at a new Santa Rosa location! Monroe Hall is on College, across from G & G Market, and is well known as a dance facility. The meeting will be Monday afternoons, beginning October 13th. 4pm meeting time (3:30 weigh-in). I hope to see some of you there, espcially those who are coming from Sebastopol, or points west, as this is far western Santa Rosa!
My other meetings are...Sonoma (FAHA Center) Mondays 9:30am (weigh in 9)
Thursdays 5pm (weigh in 4:30) Santa Rosa Center Thursdays 10am (9:30 wi) Thursdays 12 noon (11:30 wi)
(I was so sad to see our wonderful Kaiser meeting not roll over and hope we will revive it again at a future time! Meanwhile, Kaiser members, your folders will be at Santa Rosa Center in the noon Tuesday box. I will put them there this week.)

Product Recommendations

PATAKS CURRY PASTE
The recipe above calls for a curry paste and I have used this product for years. They make a multitude of different pastes, so find one that is right for you, but these are ideal for spicing up just about anything, and of course for making authentic tasting curries. And although it has a fair amount of oil in it, you use very little to get the desired effect, so the net result generally adds about a point per recipe.
