Hi Everyone!
I
am getting this out a bit earlier than usual because tomorrow I am
having my 3 teenage nieces come visit for several days. I am very
excited to have them stay with me, and it brings up, for me, an issue I
discuss frequently in meetings:
What do we feed our kids?
My nieces, fortunately, are pretty healthy eaters, with no weight
issues. But so many times I hear members say that they are challenged
by the food they have for the kids in their house. When I ask them who
buys the food, it is usually the person complaining. When I ask why
they buy that food, they say it is because the kids like it.
How did the kid learn about that particular food? Through you. How did
they learn to eat in an unhealthy way? Through you. How did you end up
having a weight problem? Through your parent's bad eating habits, most
likely.
Do you want your children to grow up having to be in these meetings? I
suspect not. Today is the day to get rid of the high fat chips and
cookies, and introduce smarter treats, more fruits and veges, and
alternate restaurant choices to the younger members of your family.
Give your kids the gift of good health. It is the best gift you can
give them!

Meeting Topics / Early July
The meeting the week of July 1st is all about grilling and cooking outside. Shrimp on the barby...yum!!
And the week of July 6th the topic is: "Fire Up Your Weight Loss Efforts". It sounds like its about barbequing, doesn't it? Well it is not, so you'll have to come and find out what that means!

RECIPE FOR THIS ISSUE
This is a delicious recipe from the In One Pot Cookbook. I have modified it to make it Core.
Spicy Chicken with Apricot Couscous
2 tsp canola oil 1 lb skinless, boneless chicken thighs, trimmed of all fat and cut into chunks 1 onion, chopped 3 cloves garlic, minced 3 Tbl minced fresh ginger 2 tsp cinnamon 2 tsp cumin 11/2 cups fat free chicken broth 1 orange, squeezed, plus pulp 1 6 oz bag baby spinach, chopped 4 fresh apricots, chopped 1/2 tsp salt 1 cup plain whole wheat couscous, uncooked 3 Tbl toasted slivered almonds *
*opional
Heat 1 tsp oil in pan and cook chicken until browned. Transfer to a bowl and set aside.
Heat other tsp of oil and add onion, garlic and ginger and saute until onion is translucent. Add cinnamon and cumin and stir for 1 minute more. Add chicken broth, orange juice and pulp, spinach, apricots and salt, and bring to a boil. Add chicken back in and add couscous. Remove from heat and wait until all the liquid is absorbed. Fluff and serve with almonds sprinkled over top.
Makes 6 servings. This is a Core recipe without almonds. With almonds it is 7 pts per serving.

The Letter Department Pamela from Sonoma asks a good question...
I like to make pesto, but it is hard to calculate the points per serving. Is a serving a tablespoon, and how would I do the math?
The way to calculate points when making a recipe is to add the points of all the ingredients together (i.e., all the pine nuts, all the olive oil, etc) and divide by the serving size. If we ended up with 1 cup of pesto, we would divide by 16: The amount of tablespoons in a cup, and that would give you the points per serving.

BOOK RECOMMENDATION
My wonderful co-worker Linda, whom many of you know, gave me this fantastic book for my birthday. It has tons of products, and what are poor choices, vs better ones, as well as restaurant and fast food places. It has BIG pictures and is very easy to read and to use. This is a must own for all of us!!
