Hello Everyone!
As I write this there is a magnificent rainbow spanning the sky. It takes my breath away! I love intense weather, and then the magical aftermath, like this.
How does it pertain to our weight loss journey? Well I think of it as maybe a coming out of the clouds...getting new inspiration and new excitement. We have our grey, rainy days, and we have our glorious rainbows. I hope this is a time of renewed motivation and joy on your path to a better, healthier you!

Recipe of the Issue
Roasted Vegetables
This isn't so much a recipe as a way of life. I began roasting vegetables on almost a weekly basis many years ago. I found they were a lot more appealing as a snack than raw veges, and they were useful to use making sandwiches, wraps, omelets and chopped into salads. You can use ANY vegetables you want, including broccoli, asparagus, corn (slice cobs up into rings), etc. 2 CARROTS, SLICED 2 ZUCHINNI, SLICED 2 POTATOES, CUT INTO CHUNKS 1 BEET, PEELED AND CUT IN CHUNKS 1 ONION, CUT IN CHUNKS 1 RED PEPPER, CORED AND SLICED IN 4-6 PIECES 2 PARSNIPS, PEELED AND SLICED 12 MUSHROOMS, CUT IN HALF SPRAY OIL LOTS OF ROSEMARY SALT & PEPPER TO TASTE
HEAT THE OVER TO 450. SPRAY A LARGE ROASTING PAN OR COOKIE SHEET WITH OIL. SPREAD THE VEGETABLES OUT ONTO THE PAN IN A SINGLE LAYER. SPRAY WITH OIL, TOP WITH ROSEMARY, SALT & PEPPER, AND ROAST FOR APPROXIMATELY 20-25 MINUTES, TURNING ONCE.
THIS IS A CORE RECIPE. MAKES 4 SERVINGS. EACH SERVING:2 PTS. ELIMINATE POTATOES AND PARSNIPS AND THIS IS ZERO POINTS.

Product of the Week
Gelato Massimo
Those of you who have been coming to my meetings for awhile will have heard me go on about my favorite ice cream. Here it is: Gelato Massimo Dark Chocolate Fat Free Sorbet. So rich you could serve it to any ice cream lover without them having any idea it was fat free. And unlike other products which are fat free on the market, this contains very little sugar and no bad ingredients at all. And it is amazingly only 6 points for the whole pint container! Even the lowest point ice creams/sorbets, etc, are rarely less than 8 for a pint. Other flavors include fruit sorbets such as mango, lemoncello, and they have gelatos, which are 8 points for the container, include coconut, hazelnut and chocolate mint swirl. And it is a northern California (Watsonville) company!

Lunch with Janet & Linda After the Thursday noon meeting in Santa Rosa
Linda and I (Linda being my receptionist in Santa Rosa) will be having our lunch outing, for all attending the noon Thursday meeting, on Thursday, Feb 21st. Put it in your calendar and come eat lunch with your Weight Watcher leader and learn some healthy ideas of eating out!
