Hello Everyone!

Here is Newsletter #4. Yep, it is the second one in this format but it is the 4th so far. Hope you all like the new format, and I am really hoping you are all receiving it. I suspect it gets picked up by some spam filters, so if you know of any fellow WW members who were expecting it, and they have not gotten it, please have them contact me, and have them check their spam and bulk mail files.

And if any of you do not want to get this please let me know! I do it for the love of being able to communicate with all of you outside the meeting room, and for no other reason. I have been told it is helping members get a reminder of their goals, and the path they are taking. I love being on that path with all of you! Let's make it a journey to remember in 2008!
Meeting Topics for the Rest of January
janet ciel dec 07
The week of January 13th we will be looking at meal planning and preparation. I always get excited when we can share ideas for cooking and planning. We will explore both Flex and Core recipe ideas, so bring any recipes in you'd like to share, or just your tried and true solutions to creating yummy meals.

The week of January 20th we will explore the realm of habits. Good, bad and ugly, we've all got them. Want to find out how to get rid of the bad ones, and create healthy ones? Don't miss this meeting!

Recipe of the Issue

Mushroom & Artichoke Chicken

cook flippingThis is a favorite recipe, which always impresses friends. Let me know what you think!

4 chicken thighs, skinned and boned
11/2 T flour
Salt & pepper
1 t olive oil
Spray oil
˝ onion, chopped
25 mushrooms (or more), thinly sliced
2 cloves garlic
1 can artichoke hearts in water
1 cup chicken broth
1/8 cup Braggs Amino Liquid

Heat oven to 350 degrees. Wash and pat the chicken thighs dry. Heat the oil in a frying pan (you can use some spray oil as well) and put 1 T of the flour, salt & pepper in a zip lock baggie. Put chicken in baggie and shake to coat. Fry chicken thighs in oil until the outsides are browned. Place in a covered baking dish.

Spray the pan again and add the onions, mushrooms and garlic. Sauté until golden. Pour in chicken broth and Braggs and simmer until the liquid reduces by half. Mix additional ˝ T of flour with a small amount of COLD chicken broth or water, and add to mixture. Add artichokes after the mixture is cooked. Layer mushroom mixture on top of chicken. Bake at 350 for 45 minutes or until bubbling and chicken is cooked through. Wonderful when served with a whole wheat couscous or whole wheat pasta.

4 servings: each serving 6 points
Except for the flour this is Core. You can make it completely Core by eliminating the flour, or count 1 point per serving.

Product of the Week

Cocoa Via Chocolate Bars

cocoa via barsI just found these bars via a recommendation from a Weight Watcher member I met while I was visiting family in Los Angeles over the holidays. They are made by Dove, and they have the "Heart Healthy" logo on the box. This one pictured is a chocolate crunch bar that is along the lines of a Nestles Crunch, only with dark chocolate, and it is my favorite, although there are lots of choices. Believe it or not these bars are only 1 point and they are very very substantial! I have found them hard to locate, so let me know if you find them out there in the world, and I will pass it on.

Lunch with Janet & Linda
After the Thursday noon meeting in Santa Rosa
cocoa viaLinda and I went with 5 Weight Watcher members to eat lunch after the noon meeting last week, as we will do every first Thursday of the month. It was great fun. We went to Chevy's, which we picked because it is a somewhat generic type of restaurant, so learning to eat in a healthy way in that environment can be of value for other places which are similar.

So the first Thursday of February will be our next outing. Want to join us? Just come to the noon meeting at Santa Rosa center, and an hour after the meeting is over we will meet the gang at a restaurant we all choose. Learn how to be a Weight Watcher in all situations. It is great fun and great learning too!
