Brine Mix 3 quarts water 1 quart pineapple juice 1/2 cup regular salt (1 cup Kosher salt) 1/4 cup brown sugar crushed black peppercorns
One large bowl, basin, or pot large enough to immerse bird completely
Method: 1) place turkey, breast side down, in container 2) pour brine over turkey until completely covered 3) leave in refrigerator for 10-12 hours or overnight (or 1 hour/pound for a large bird) 4) rinse well 5) dry well by patting down with paper towels
Roasting: 1) preheat oven to 500 degrees F 2) roast, breast side down, for 30 minutes on a roasting pan 3) without opening the oven door, turn temperature down to 350 degrees
Calculate roasting times from this point. Roasting time should be 10 minutes/1 pound
*a 14-16 pound bird will require an extra 2 1/2 hours of roasting *a 20-25 pound bird will require an extra 4 hours of roasting
1) continue roasting for required time 2) take the turkey and roasting pan out of the oven 3) turn the oven back up to 400 degrees F 4) add a couple of cups of water to the pan and place turkey on breast side up 5) brush the turkey with melted butter and sprinkle brown sugar and freshly ground black pepper 6) put back in the oven and continue roasting until the breast meat reaches 165 degrees F and the thigh meat reaches 170 degrees F 7) baste frequently and check the temperature every 5-10 min until temperature is reached and skin is brown and crispy 8) remove from oven and cover with foil 9) let turkey rest for 30 min before carving
