Leafy Green Goodness

I have a confession...until last year I had never tried kale. Then, while I was doing the Standard Process Purification and looking for food options I decided to try it. And, I discovered that I love it!! I even eat kale sauteed in butter for breakfast about once per week (usually with fried eggs).

 

Kale is a Superfood and has several varieties including curly, red, green and dinosaur (aka lacinto.)  It is one of the most nutrient dense vegetables you'll find (some say THE most.) Basically, that means it is power packed with valuable nutrients that can keep you healthy. 

Kale is rich in Vitamin K (good for the bones and prevents calcium build up in the tissue), Vitamin A (benefits the immune system), Vitamin C (helps the immune system and eyes) and Calcium.It's a great source of fiber and may even have anti-inflammatory and anti-cancer properties according to recent research. 

I just say its tasty and good for you too.

Thanks to Dr. Shannon's patient who found this great Kale Salad recipe on FoodNetwork. It has over 400 positive reviews (and some from former non-kale lovers.)  The name sounds little risque' but you're sure to fall in love with this salad. Enjoy.

 

Massaged Kale Salad

Green, leafy goodness!

 

 Massaged Kale Salad  

  

1) One bunch kale, stalks removed and discarded, leaves thinly sliced.
2) The juice of a lemon
3) ¼ c. extra virgin olive oil, plus extra for drizzling.
4) Sea salt
5) 2 tsps honey
6) Fresh ground black pepper
7) Mango, peeled and diced small
8) Small handful toasted pumpkin seeds (pepitas)

In large serving bowl, add the kale, ½ the lemon juice, and a drizzle of oil with a little salt. Massage until the kale starts to soften and wilt, 2-3 minutes. Set aside while you make the dressing.


In a small bowl whisk remaining lemon juice with the honey and lots of freshly ground black pepper. Stream in the ¼ cup of oil while whisking until a dressing forms.
Pour the dressing over the kale, and add the mango and pepitas. Toss and serve.

Gazpacho

Cool, red and spicy!

 

1 large jar of organic veggie juice (Knudsen makes a good on)

 

2 cucumbers, seeded and partially peeled

 

1 large or 2 small zuchinni, partially peeled

 

½ of a green pepper

 

2-3 cloves of garlic

 

Small onion

 

2 large or 4 small tomatoes, seeds removed

 

Tabasco sauce, sea salt and fresh basil

 

In a food processor or blender, blend all veggies into small chunks, as fine or coarse as you would like.

 

Add to a large bowl containing the veggie juice and season with salt and Tabasco to taste. Add 3-4 chopped basil leaves. Chill and serve cold.

What was it like before?

 

I was really tired all of the time, especially in the morning which made work difficult. I was putting on weight even though I was eating pretty well. Gas, bloating, and digestive irregularity were nearly constant.

 

How is it now?

 

I have more energy overall. My weight is reducing even though I'm eating a lot - just not carbs. Gas and bloating are almost non-existent.

What was it like before?


 Cramps... I had them so strong that sometimes it would make me so sick that I would throw up. I would also have extreme pain in my shoulders - continuous pain like someone was digging a stick under my shoulder blade.


 How is it now?


 Cramps are better. I still have a small amount of pain, but nothing that would stop me from doing the things I need to. Shoulders - I have a dull pain like someone is pressing their hand onto them, but nothing as extreme as before.

What was it like before?

 

I was very fatigued, stressed, and lacked energy. I came to the office wanting a natural way to feel better. I wasn't very motivated due to my lack of energy.

 

How is it now?

 

I am very eager to start my day, clearly more energy. Not as fatigued at work and my concentration has improved.
