Greetings! There is a lot of false and misleading information regarding diet and nutrition. The best way to approach diet is by knowing the history of food consumption and its relationship with health and disease. First let's start with how our health has fared over the last few years... Diabetes rose 49% from 1992 to 2002. The incidence of heart disease rose 487% from 1972 to 1996. The percentage of overweight Americans went from 45% to 65% from 1965 to 2002. Obesity has doubled in the last 15 years. The incidence of cancer has risen 58% from 1950 to 1996. Our health is ranked #72 in the world compared to all other countries by the World Health Organization. Conclusion: our health is pretty bad and it's getting worse. |

Now, let's look at the consumption of food. We are
told that
eating cholesterol and saturated fat is causing this.
However, in the last 100 years, the consumption of
both of
these has
decreased according to the USDA. Historical data
does not
support the theory that saturated fat and
cholesterol cause
heart disease, cancer, diabetes, overweight and
cancer!
What is causing these problems?
There are three foods that have have increased in our diet at a one-to-one ratio with the rise of disease. One of these is the unnatural fats called "trans" or "hydrogenated". If you see either of these on the ingredients label, avoid it. The other two categories of foods that have increased in the last 100 years are these: white sugar and white flour. White flour consumption has increased from a few pounds per person per year to 180. The white flour is molded and shaped into various forms and given fancy names like "baguette", "bagel", "fettucini", "mostaccoli" or "hot dog bun". Regardless of it's name, it all comes from the same white, damaging powder. Seek out WHOLE grains. It will say "whole" on the label.

The white sugar comes primarily in the form of (high fructose) corn syrup. From 1909 until the late 1960's the average American ate about 5 or 6 pounds of this per year. Now it's 210 pounds per year. This is the premiere cause of disease in this country! It's not genetics, old age, deficiency in drugs or bacteria. If you see corn syrup on a label, please avoid it! It is primarily found in pop which has overtaken white bread as the biggest source of calories in this country.
