| Super Juicy Salad
-- Mix of watercress, spinach and arugula leaves
-- 1 Large juicy mango
-- 1 Large avocado
-- 1 Orange bell pepper
-- Baby plum tomatoes
-- Handful of sunflower seeds
-- Fresh orange and extra virgin olive oil
-- Sprinkle of Celtic Sea Salt
Wash and prepare leaves by tearing into small pieces.
Finely chop the avocado, tomatoes, pepper and mango and add to bowl.
Sprinkle on the sunflower seeds (or other seeds of choice)
Dress using the juice of one large juicy orange and a little olive oil plus the sprinkling of salt (optional)
Arrange on a beautiful plate and enjoy!

Bodacious Broccoli
-- 2 tsp tamari, soy sauce or Bragg's Aminos
-- 1/2 cup chopped mushrooms or fresh tomato
-- 1/2 cup sunflower seeds
-- 1/4 red onion, chopped
Cut broccoli florets from the stalks and place the florets in a large mixing bowl.
Blend the tahini, garlic, lemon juice, water and tamari until smooth and creamy.
Pour the mixture onto the broccoli florets and mushrooms/tomatoes and stir until evenly covered with sauce.
Sprinkle in the sunflower seeds and onion. Stir again.

Here Comes the Sun...and I say ... It's All Right!
Sunlight is a nutrient that our bodies desperately need to stay healthy. The skin is the largest organ of the body, and our overall health and well being is reflected on it. Getting back to nature allows our skin to soak up precious Vitamin D -- so why are we always slathering on sunscreen or covering up to avoid sun exposure??
The idea that the sun is bad for us is completely nuts! We evolved under the sun, without houses, clothes, hats or sunscreen. Skin cancer rates are on the increase yet we get a tiny fraction of the sun exposure our ancestors did. Clearly there is something else at play here.
Skin cancer was very rare 100 years ago and is still very rare among many populations. For example, there is virtually no skin cancer in Africa, where people stay in the sun all day long without sunscreen. If you think that's because of the protective effect of darker skin pigmentation, think again: people with African heritage who live in America have very high rates of skin cancer.
The sunscreen industry and the medical establishment tell us that the rates would drop if people would only use more sunscreen. But given the fact that conventional sunscreens contain numerous carcinogenic substances, it may not be a coincidence that skin cancer rates have increased in tandem with their increased use.
There isn't time to list all of the dangerous substances in conventional sunscreens and their detrimental health effects. However, the important thing to realize is that sunscreens contain a cocktail of chemicals that either damage skin and/or also travel through skin into the bloodstream causing much more widespread damage. In fact, a large proportion of the active ingredients in sunscreens also act as "penetration enhancers", meaning they aid the movement of other chemicals through the skin and into the blood. An example of this is proplyene glycol -- which also happens to be used in anti-freeze and to de-ice airplanes!!! See more about chemicals in our skin care in Wellness For Women. Chemicals create free radical damage that leads to disease and premature aging.
Another way in which sunscreens increase cancer risk is by blocking the production of vitamin D in the skin. Even SPF 8 sunscreen blocks 95% of vitamin D production in the skin.
Numerous studies have shown adequate vitamin D levels protect us against many forms of cancer. Adequate vitamin D is needed for proper immune functioning, for proper mental and emotional functioning, for bone health, and for many other essential bodily systems and functions! We are designed to have our needs for it easily met by sunlight, yet most of us are chronically deficient in this nutrient. It's almost as if we live in modern day caves -- living and working indoors all day, we may rarely get out in the sun.
So, practice safe sun exposure, get out and enjoy our beautiful sun!! Allow the sun to warm your skin to just the slightest pink for maximum Vitamin D exposure. More than that will not increase your Vitamin D level, but it will increase your chances of prematurely aging your skin.
Don't ever let your skin burn. Get to know your skin and if you ever suspect it is starting to burn, either get inside, cover up, or apply a natural, non-toxic sunscreen. Check out some non-toxic brands here. If your skin burns easily, load up on antioxidants in fresh, raw fruits and veggies! This alone can enable you to enjoy safe sun exposure for longer without external protection as your skin will be protected from the inside.

Green is Sexy
Greens. The sexiest of all food groups! Chlorophyll is one of nature's greatest healers. If you want glowing health and beautiful skin, choose greens: arugula, collards, parsley, kale, chard, watercress, nettles, dandelion, spinach, sprouts -- any green, any time! So much research has been done on the benefits of greens. Greens help us digest other foods by stimulating the secretion of digestive enzymes. They are an excellent source of amino acids -- in fact, greens are the primary food group that match human nutritional needs most completely! Why aren't you eating them??
"Life expectancy would grow by leaps and bounds if green vegetables smelled as good as bacon." ~ Doug Larson Why is it so hard to love greens?? Take a look at what has been found when greens are put to the test:
- Researchers from the Harvard School of Public Health found that individuals who eat leafy greens had a 23% reduction in coronary heart disease.
- Scientists found that a diet rich in leafy green vegetables actually showed a significant reduction in the chance of developing colon cancer.
- Research shows that folate, one of the impressive B Vitamins in greens, may protect against cognitive decline in older adults .
- Studies found that caratenoids (powerful antioxidants) in green leafy vegetables can inhibit the growth of certain types of breast cancer cells, skin cancer cells, lung cancer and stomach cancer.
- Another study showed that women who ate the most leafy greens had half the risk of ovarian cancer compared to those who ate the least. Half!! What are you waiting for??
The darker the green, the more nutrients they hold. Choose those that are lusciously deep in color, like kale and collards, and mix them with a variety of shades, textures and tastes for the perfect balance of vitamins and minerals.
Have you ever dared to eat raw collard greens?? Dinosaurs must have been gnawing on collard greens because they date back all the way to prehistoric times. They're one of the oldest members of the cabbage family and a close cousin of another one of my favorite greens, the super sexy Kale. The vitamin K, A, C and magnesium levels in collards are off the charts and their folate, calcium and dietary fiber content is impressive, too. Try this easy recipe:
Collard Green Wrap Cut the stems off of 1 or 2 collard green leaves. Cover with a layer of hummus. Add filling, such as grated carrot, sliced zucchini, sprouts, avocado, tomato, quinoa or anything you like or have on hand. Fold over the bottom and roll up like a burrito. Easy, healthy, portable and a cinch to make!
Super Sexy Smoothie
1 cup pineapple, fresh or frozen 1 ripe banana, fresh or frozen 1 fresh, juicy mango or 1 cup frozen 7 leaves of dinosaur kale (stems removed) 2 cups water
Blend until creamy. Use more or less water to get your desired thickness.
The super sexy kale is considered to be a nutritional super star among green veggies, with very strong antioxidant and anti-inflammatory properties.
Leafy Greens Rock!!
Get green and get your sexy back!! Try to include at least one good green salad into your diet every day -- two if you can. Add greens to your smoothies! Juice greens! Fuel your glow with greens!
