Seasons Greetings from

Penn Cove Shellfish!

Holiday Parade

The holiday season is upon us and the new  year is just around the corner.

Christmas is a very busy time for us and although it's great to finish the year with a flurry, we are excited to get started with 2012 as well.

Overall 2011 was considered a lean year for shellfish production in the Northwest, including British Columbia. Due to the cool year from ther lingering effects of La Niņa, this resulted in less food in the water and therefore slow shellfish growth.

The good news is the oyster conditions and inventories are as good as they have been all year, Manila Clams are tasting great and our mussels are filling their shells very nicely.

We always invite you to check out the

oyster evaluation sheet for the current status of the oysters from our website www.penncoveshellfish.com.

We hope you all have a fantastic holiday season and and very prosperous 2012!

Oyster of the Month

The Chef Creek

This oyster is raised near Chef Creek in Baynes Sound on Vancouver Island in British Columbia, Canada. It is tray grown to a perfect size for half shell eating, approximately 3 inches. After harvest, these oysters are brought to Penn Cove where they are suspended in certified wet storage tanks sold. This oysters taste has a nice medium briny, yet sweet flavor.
