Welcome to the July edition of the Penn Cove Shellfish Newsletter!

Well summer is in full swing and July is moving along very quickly. Here at Penn Cove we are very busy with our daily routine of receiving orders, harvesting and shipping.
So far it's been a rough summer for oysters, first with a quantity available from our northern growers and now that we are in the middle of summer, there are some of the usual issues with spawn which crop up at this time of year.
Good news is that we are just now working our way out of an oyster shortage from Canada. We have done our best to bring back as many oysters as we can but it has been challenging to meet all of our customers needs. We will keep everyone posted on Canadian oyster availability as we go forward.
As mentioned above, the spawn condition of some oysters is starting to move up so it's always a good idea this time of year to pay even more attention to our weekly oyster evaluation that we post every Thursday on our website www.penncoveshellfish.com.

National Fisheries Institute Visit | On July 12th we were treated to a visit from a group of industry professionals that were in Seattle as part of the National Fisheries Institutes Future Leaders tour. Representatives from around the country spent time in the Seattle area learning about Northwest Seafood companies, marine industry and also about Penn Cove Shellfish. It was a great time spending the afternoon out on the water, touring our mussel rafts and sharing the story about how we grow, harvest and ship our shellfish products.

Shellfish Nutrition- It's good for you! |
The nutrition of shellfish is often overlooked because people are too busy enjoying eating shellfish to worry about the healthy qualities of what they are eating.
Putting aside all of the famed aphrodisiacal qualities of shellfish for the moment; if you had just one thing to eat from the sea, mussels, clams or oysters would be a great tasting and extremely healthy choice.
Shellfish are loaded with essential minerals, protein, vitamins B12 and C, and Omega-3 fatty acids to help keep you feeling great and your cholesterol levels in check.
Our shellfish are low in fat and calories, like a lean piece of beef or chicken, and as with anything else, it is how you cook them or what you eat with them that you want to watch if you are counting calories. |
Recipe of the Month - Irish Beer and Mussel Soup |
This fun recipe is new to our line up and is super delicious. Hope you give it a try!
Ingredients
2 tablespoons olive oil1 large shallot, minced Pinch curry powder 1 medium garlic clove, minced 1 (12 ounce) bottle light Irish beer 1 cup clam juice or chicken broth 1 bay leaf 1 sprig thyme 1 1/2 cups heavy cream 4 pounds Penn Cove Mussels 1/4 cup chopped flat leaf parsley Salt and freshly ground pepper to taste Directions Heat a large, heavy bottomed soup pot or Dutch oven over medium-high heat. Add oil and shallots. Cook until translucent. Add curry powder and garlic and stir for another 10 seconds. Add beer, clam juice, bay leaf, thyme and cream. Season lightly with salt and pepper and bring to boil. Add mussels. Cover and cook until mussels open, stir in parsley and adjust seasoning to taste. Serve immediately with crusty bread and a cold beer. Enjoy!

Oyster of the Month The Effingham |
This premium 3- 3.5" quality oyster is the newest addion to our oyster line up. They are tray raised in the deep waters of Effingham Inlet in Barkley Sound on the West Coast of Vancouver Island. This remote pristine environment produces oysters perfect for serving on the half shell.
Effingham Inlet oysters have plump cream coloured meat with a vibrant briny flavor and smooth lettuce like finish. On-site conditioning with a tumbler provides a uniform size, deeper cup and clean hard shells.
