For some of us, the holidays are a busy, hectic time when we often put our own health a notch or two lower on the priority list just to get a few more things done. Why can't we accomplish both? How about trying this; adding movement to those unending holiday errands and chores. You could exaggerate your steps; first by lifting your legs a bit higher then by by taking longer strides. Park further away to enable a welcomed yet small walk, lift your bags a few times in an arm curl before setting them down.

Perhaps you could make your workout at the gym a stop during your busy day by dressing in clothes that work both for shopping and exercise.

Keep smiling and keep moving! If you can't get to the gym, use your own stairs at home for a quick but efficient workout. Plug in a yoga tape and go for it as both a workout and a stress relief.

Nuture the gratitude you feel for the goodness in your life. Try to focus on just one thing at a time and give yourself a moment to really feel it. That may end up being be the best gift of the season and you can give it to yourself anytime!

Gingerbread Cookies 

 

Enjoy making these low glycemic index, gluten free cookies as much as eating them. Use nuts and dried fruit to decorate happy little faces and funny holiday clothes.

 

  

Cream:

1 cup coconut spread

1 3/4 cup coconut crytals

 

Mix in and scrape bowl:

1 cup raw honey

1 cup molasses

 

Mix in and scrape bowl:

4 eggs

1 tsp soda

1 tsp nutmeg

1 tsp cinnamon

1 tsp allspice

1/4 tsp cloves

1 TBL spoon ginger-dried ground

2 tsp ginger- fresh grated

 

8 cups gluten free flour

 

*Wrap and refridgerate at least 4 hours, best over night

*Put on your favorite Holiday music 

*Roll out cold dough 1/4 inch thick, use cutters for shapes or a pizza cutter for squares

*Decorate with nuts, fruit or coconut, lightly patting them into the dough

*Bake on parchment paper @ 350 for about 12 minutes or until the edges just begin to darken

*Store in a cookie tin or freeze until party (or tea) time
