Butternut Squash
Butternut squash is a type of winter squash. It has a sweet, nutty taste similar to that of a pumpkin. It has yellow skin and orange fleshy pulp. When ripe, it turns increasingly deep orange, and becomes sweeter and richer. It grows on a vine.
It is a good source of fiber, vitamin C, manganese, magnesium, and potassium. It is also an excellent source of vitamin A and vitamin E.
It is a fruit that can be roasted, toasted, and also be puréed (to make a soup) or mashed into soups, casseroles, breads, and muffins.
The fruit is prepared by removing the skin, stalk and seeds. The seeds are edible, either raw or roasted and the skin is also edible and softens when roasted. One of the most common ways to prepare butternut squash is roasting. To do this, the squash is cut in half lengthwise, lightly brushed with cooking oil, and placed cut side down on a baking sheet. It is then baked for 45 minutes or until it is softened. Once roasted, it can be eaten in a variety of ways as outlined above.

It is the holiday season!! This can be a very stressful time of year for most people. Stress can be good if you are responding in a healthy way, but it can cause damage if you are not taking care of yourself. If this is a stressful time of year for you, here are some things you can do to keep yourself healthy and happy!
- Find time to exercise: Exercise increases endorphins, promotes better sleep, boosts your mood, controls weight, increases bone density, boosts immune function, and many more wonderful benefits!!
- Don't overfill your scheudle: Only pick a few things to do over the holidays that would strengthen you. Too often we attend every event, go to every festival, or spend too much time shopping. Slow things down this holiday and enjoy time with people who increase your energy, rather than people who wear you out!
- Eat Healthy: This time of year is full of candy, desserts and fatty foods! Be sure to eat plenty of vegetables and limit the bad foods. Have your vegetables and fruit easily accessible and ready to go. Fill up on them before you go to parties where you will be tempted to eat all the treats.
- Find a way to relax: Try some deep breathing while you are driving, take a yoga class, relax in a bath or hot tub. Try meditating before you go to bed or writing in a journal to get your thoughts out. It does not have to take up a lot of time, just be sure to rejuvinate so that you don't wear yourself out.
- Figure out what is important to you: Write down the 5 most important things in your life. Dedicate time everyday doing those things.
- Give Thanks: Be grateful for what you have in your life and focus on the good. It may not seem like there is a lot at times, but I'll bet you can find something. Once you focus more on the good in life, you will find that more will appear.
We hope you enjoy your Thanksgiving!! |
