riccardo market dayTo market, to market we go.  We are sad to see the summer produce leave but are pumped to bring in the tastes of the fall season with pumpkin, wild boar, mushrooms, root vegetables and cabbage.  You will start to see the seasonal changes in our daily specials and on to our new "Fall" menu coming in the next couple of weeks.
 
One of our successful dishes now is the fresh mission figs stuffed with Gorgonzola cheese drizzled with honey.  Check out the recipe below.   
 
OCTOBER BIRTHDAYS
 
Monika and I realize that many of you celebrate your birthdays here at Sotto Sopra and have been doing so over the years.  With the economic times being what they are we decided we would give you a gift this year to help your celebrate.  We went through our records, and compiled a list of October birthday guys and gals.  For all of you on the birthday list at the bottom of the newsletter please accept a complimentary dinner on us up to $30 off our regular dinner menu selections.
 
No need to bring a coupon, we have the list of names.  Just let your waiter or waitress know when you get to your table that you are on the October birthday list - simple, no fuss.

I recently went to Beirut to consult on a restaurant and was happily surprised at the beauty of the mountains, the skiing, the food and the people. 
 
I'm putting on my chef's coat for special embassy events in Washington DC during the month.  This takes me back to my early days as the chef for the Italian Ambassador.

Our own Exec Chef Bill Crouse has been featured on www.Xurban.TV, click on "the food" and you will see Sotto Sopra's name - you can watch his interview and a cooking demonstration. (they mixed up the videos so the interview shows the cooking demo and the cooking demo shows the interview.)

Gorgonzola Stuffed Mission Figs
Serves 2
 
Ingredients:
6 Fresh mission figs
6 tablespoons Gorgonzola cheese
1/4 cup honey
6 slices Prosciutto
2 cups of mixed salad greens
2 tablespoons to 4 tablespoons aged balsamic vinegar
 
Preheat the oven to 400 degrees. 
 
Slice the fig from the stem area down into quarters without cutting all the way through.  Put a tablespoon of Gorgonzola cheese in each fig. Place the figs in a small baking pan and drizzle with the honey.  Put the figs in the oven for about 5-7 minutes until the cheese begins to melt. 
 
While the figs are baking, line a chilled plate with the salad greens and slices of prosciutto.  Top with the baked figs and drizzle (to taste) the aged balsamic vinegar.  If you don't have quality aged balsamic vinegar you can boil regular balsamic vinegar and reduce it by half then having a balsamic glaze.
 
Feel free to increase or reduce any of the amounts listed - this is to personal taste.

Chef Bill Crouse invites you to come into Sotto Sopra any Wednesday evening and enjoy his 3 course tasting menu. Chef changes the tasting menu monthly and highlights various dishes from our dinner menu. We will be offering our seasonal dinner menu as well as the chef's 3 course tasting menu.

Roasted Red Beets and Gorgonzola Salad

House-made Porchetta
with shaved Parmesan cheese, toasted Tuscan bread and D.O.P. olive oil

Roasted Pear Salad
with pecans and Champagne vinaigrette

Fried Calamari
with garlic aioli and spicy tomato coulis

2nd Course: choice of one
Honey-Lavender Crusted Salmon
with chive studded mashed potatoes and roasted broccoli

Spinach Ravioli
sautéed in butter and sage with fresh tomato sauce

Bucatini all' Amatriciana
bucatini pasta with bacon, onions, crushed red pepper and fresh tomato sauce

Veal Piccata
pounded veal with shallots, capers, and parsley in lemon and white wine, horseradish mashed potatoes and sautéed vegetables

Chicken Involtini
chicken breast rolled with smoked bacon and Brie cheese lightly roasted with porcini mushrooms and asparagus over potato gratin

3rd Course: choice of one

So You're Going To Italy

 
October is a great month for Italian food festivals, especially mushrooms, chestnuts, chocolate, and truffles. On October weekends, you'll find fall food festivals and wine harvest celebrations all over Italy. Slow Food's big International Food Event is in October and World Pasta Day is the fourth Sunday in October.
 
Although Halloween is not such a big celebration in Italy, it is becoming more popular and you may find Halloween festivals, especially in the larger cities.

Here are some of Italy's top October festivals and Truffle Fairs.

Alba White Truffle Festival takes place on weekends throughout October in the Piedmont town of Alba (Piedmont map). This is one of the biggest truffle festivals in Italy. One of the events is a donkey race.
 
Fall Truffle Fairs in Italy - Some of the biggest truffle festivals in Piedmont, Tuscany, Umbria, Le Marche, and Emilia Romagna regions during October and November. 
 
Boccaccesca - A gastronomic fair the first two weekends of October is held in Certaldo Alto, Tuscany
 
Umbria Fall Food Festivals - truffles, chestnuts, and chocolate in Umbria, the center of Italy, from 2006 but dates should be similar.

Look for other truffle and chestnut festivals in small towns in October and November, especially in northern and central Italy.
 
 Maschera di Ferro, a festival that celebrates the legend of the man in the iron mask, takes place in the Piedmont region the first weekend of October. Take a look at the Maschera di Ferro, Iron Mask festival in Pinerolo, and get the details.

Cooking Class at Sotto Sopra

We have rescheduled the October cooking class to Sunday, October 12  due to the scheduling of a private party on the 5th.  Join executive chef Bill Crouse in the Sotto Sopra Kitchen for an exciting cooking class. The class is demonstration with optional hands-on for those who wish to participate. After class is completed everyone sits down and enjoys the food prepared in class along with wine. 

 
Classes are limited in size and requires reservations at 410 625 0534.

Patti currently resides in Canton. She's an uber-foodie with a special knack for dissecting a dish's ingredients in a single bite.
