What's Happening at Island Natural


Okay, the calendar says it's Spring, but the weather and temperature need to catch up.  If your taste buds are waking up and craving a fresh salad after all of the cooked winter food, we have everything in the produce department to create one. Add some pumpkin seeds, cranberries, pecans and goji berries to your salad for a change and a more filling, nutritious option.

Gear up for one more eating holiday though with fresh non-medicated ham or turkey and all the organic fixings - yams, potatoes, cauliflower, broccoli and more. Or try our vegetarian Sweet Potato Gratin recipe below. And don't forget to stock up on the best chocolate in town! Recipe of the Month: Sweet Potato Gratin  


Ingredients:  
1 garlic clove minced 
2 tsp freshly grated lime peel
3 Tbsp fresh lime juice
3 Tbsp cilantro, chopped
1 tsp dried thyme
salt to taste
14 oz coconut milk
1/2 cup water
4 cups sweet potatoes or yams, peeled and chopped 
2 cups cooked brown rice
15 oz can of black beans
4 cups fresh spinach leaves, sliced into ribbons
 
Topping:
3/4 cup quinoa flakes
2 tsp thyme
1/4 tsp cumin
1 Tbsp olive oil

Combine garlic, lime peel and juice, cilantro, thyme, salt, coconut milk and water.  Pour 1/3 of this mixture into a 9 X 13" baking pan. Layer 1/2 of the sweet potatoes on top, followed by 1/2 of the rice, black beans and spinach. Pour another 1/3 of the liquid over and then the remaining layers. Pour remaining liquid to cover entire dish. Combine all topping ingredients and sprinkle on top. Bake uncovered at 350 for about an hour. Let sit for 2 - 3 min. to firm up  before serving.

Makes 8 servings.
