 Regional Access is proud to announce, in collaboration with Stone Church Farm, the imminent arrival of the once famed Normandy Duck. This duck was developed in the early 1800's in Normandy, France by a group of farmers who wanted to improve on the quality of duck that was then being grown. What they were able to create was a duck with amazing flavor and texture, as well as greater meat to bone yield, less shrinkage, and better skin to fat ratio. They have been the standard of great duck ever since. These ducks are now being raised on the pastures and ponds of a few farms here in the Finger Lakes, following centuries old French traditions, and utilizing only indigenous feed of the region to supplement their pasture and pond based diet. The combination of this forage and feed gives these birds a taste that is complex and multidimensional, rooted in a sense of place. The whole birds will be available fresh starting the first week in September. We will have several hundred of these a week, but they will go fast, so order early.
