Thanks to my awesome assistant, Ashley, for putting together this wonderful newsletter. It seems my energy is pulled in a million different directions these days, so I'm grateful to have someone who can distill it all down to a single newsletter to help keep in touch with all of you.
 
I'm still busily working on the books, the films, the animal rescue, and the various product lines that I am hoping will help to make the world a better place.

I'm also doing my best to both inform and inspire in ways that I truly hope will be beneficial.
 
We are indeed living in eventful times on Planet Earth. It seems that there is much fear about all of the changes that are taking place on many levels. I believe that what we must do is refrain from feeding into that fear -- but refrain from burying our heads in the sand as well.
 
Self-empowerment can help to mitigate fear. One of the most powerful -- and empowering -- things we can do is to become as informed as possible, and then take positive action. This means looking deeply into issues and making truly informed choices that are based not on what we are told to believe, but on what we truly believe once we have all the facts.
 
On a more practical level, if we fear the various changes and catastrophes that seem to be accelerating at this time, then it is in our own best interest to make preparations. Are we living in what we deem to be a safe place? Do we have the means to feed and shelter ourselves if the sources and utilities we count on are suddenly halted? Have we considered our loved ones -- including our companion animals -- in these preparations? Even if we end up never needing them, just the simple act of gathering basic supplies -- and becoming prepared -- can help to give us a sense of empowerment, which can lead to calm and reassurance in a world where the popular culture seems to provide anything but.
 
One of our current projects involves updating the EnLighthouse website, including the
What's Up? page. Here, it is my goal to offer suggestions on what we can all do to become more empowered and self-sufficient in times of change. And even if changes never reach our own backyards, there's nothing wrong with being empowered and self-sufficient!  ;)
 
I wish you all peace, enlightenment, and all of the good that life has to offer!

Vegan Recipe of the Month
Raw Apple Pie
Apple
Almond Crust
2 c. Almonds - soaked and dehydrated, if possible*
1/3-1/2 c. dates - remove pits first!

Mix ingredients in food processor.** Add water if necessary to mix. Form into pie plate.

Raw Apple Pie
4 c. shredded apple - use food processor if available**
3/4 c. pureed dates - remove pits first!
1 1/2 tsp. cinnamon, or to taste
Optional Ingredients Include: 
1 c. well-ground almonds - preferably soaked, peeled, and dehydrated*
1 Tbs. alcohol-free vanilla extract, or to taste
1/4 - 1/2 c. raisins 

Mix all ingredients in a bowl with a fork. Dump into crust and enjoy!
    
[Please note(1) We STRONGLY encourage using ORGANIC ingredients or the equivalent.  (2) **If you do not have a food processor, a manual shredder/chopper and some good ol' fashioned mashing will do the trick!  (3) *It is wise to use plant-based enzymes with all un-soaked nuts, seeds, and grains.

 The Role of Animals
Excerpted from a 2010 email correspondence

Animals are evolved souls that, among other things, provide us the opportunity to learn and exercise unconditional love. They give us unique opportunities to forgive, change our behavior, correct situations that are immoral, see each other through someone else's eyes, and much more. Whether we hear of the abuse of a neighbor's pet and have to decide to act, or have to decide how far we will go to redress the ills of factory farming, animals show us our convictions. I believe they made the choice, ultimately, for a better world. 

 

Our world is in the process of evolving. It is a very necessary evolution that will result in a more ideal world for all beings. Consciousness on the planet is changing but still lends itself to suffering on many levels. The crucial lessons of compassion and unconditional love are often the most difficult to teach, and most needed. They come from the most learned and giving souls. Animals are often the ones who fill this role. They exemplify what it means to truly be ourselves. When we can all learn this lesson, the vibration or consciousness on the planet will reach a height where all beings coexist in a loving and mutually supportive way. One day the Earth can be a place where humans treat animals as their brothers and sisters, and animals do not live off one another.

Animal souls are providing humans the opportunity to grow and the impetus to change our world and thinking, and they must do this from a place of enlightenment themselves. Unfortunately, we humans are taking our sweet time! We need to respect our teachers and their sacrifice and know that their efforts come from Love and are to aid in a raising of consciousness - not providing dinner!   ;)

Let us celebrate our animal friends and their good work!

Canola, Corn, Papaya, Rice from China, Soy, Sugar Beets, Zucchini, and Yellow Summer Squash.*


Genetically modified food, which contains genetically modified organisms (GMO's), is all too common. It is our right to know when our food has been tampered with. Did you know that one genetic modification causes a plant to produce internal pesticide? Doesn't sound healthy to us! What about the fact that GMO's have been linked to birth defects and a host of other ills? Or the fact that many of Monsanto's genetically modified plants do not seed? These GMO plants have been found invading non-GMO farms, leading to a situation in which plants that cannot reproduce  are introducing themselves prominently into our food supply. This is not a tenable situation!

 

We need to pay attention to where our food comes from and who is in control of it...and what they are telling us about it! Maybe you heard about McDonalds' recent ethical revelation (hardly!)? McDonald's will begin phasing out the two-foot wide steel cages that female pigs are kept in, unable to walk or turn around, while pregnant. In a factory farm, females stay pregnant! This is just one poignant reminder of the state of affairs in the meat industrial complex. Those same animals - who've never walked in grass or felt the unobstructed sun - are fed the GMO corn and soy that started this rant.

This is yet another reminder that eating an Organic Vegan diet is good for our health, our conscience, and the planet!
