 May is a very busy month starting with May 1st where we will be running an Obstacle Course for children at the Emerson Hospital's Family Health Expo.  Come and visit our booth and bring your kids.  The Triathlon and Women's Self Defense class both start on May 8th and the Run for the Woods is May 16th.  Try the Taco Salad recipe below. It received several great reviews on the Food Network.
20 Minute Walk = 12 Hours of Energy!
 
 
 
A 20-minute walk can give you a blast of energy that lasts all day long.  Scientist at the University of Vermont were surprised to find that not only does exercise give you an immediate mood and energy lift but the lift could last all day long.
 
Those mood-boosting endorphins you get from exercise (in this case a 20 minute walk) stay elevated for a few hours after exercise.  However, the effect of the exercise on your outlook helps you handle stress throughout the day.  Exercise is a stress reducer and whether it proceeds or follows the stress doesn't seem to matter.
 
I can honestly say that the ladies who start the day in my boot camp go home in a great mood and are able to handle the stress of the day much better.  Not only that but they get a better nights sleep as well.  Women tell me that other mom's at the bus stop ask them why they're in such a good mood.  Their kids say the mornings are more fun when they attend boot camp.  Well, that would be motivator enough for me, but then again, I get the same boost of energy teaching the boot camp.  You have to practice what you preach you know.
 
If you're feeling stressed or tired at work, get up and take a 20 minute walk and see the difference it has on the rest of your day.  You may even solve a problem while you're walking.  Exercise has been known to increase brain activity.

FFI will be running an Obstacle Course for children along with hosting a booth with information on our Summer Weight Loss Day Camp for Kids offered through Emerson Hospital.  Come and visit our booth and bring your kids to run the course.  Click here for more information.

Taco Salad
 
Taco SaladIngredients:
For Meat:
3/4 pound lean ground beef (90 percent lean or higher) ** You can use ground turkey instead.
2 cloves garlic, minced
1 (15.5-ounce) can black beans, drained and rinsed
1 tablespoon chili powder
1/4 teaspoon cayenne pepper, plus more to taste
1/3 cup water
 
For Dressing:
4 medium tomatoes, diced
2 tablespoons olive oil
2 tablespoons fresh lime juice
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
 
For Salad:
2 hearts romaine lettuce, chopped
1/2 cup grated Cheddar
2 ounces baked corn tortilla chips (about 32 chips)
 
Directions:
To prepare the meat, heat a large skillet over a medium-high heat. Add the beef and cook until no longer pink, stirring occasionally and breaking the meat up with the spoon. Add the garlic and beans and cook for 2 minutes more. Add the chili powder, cayenne and water and stir until well combined and some but not all of the liquid has been absorbed. Remove from the heat and allow the mixture to cool slightly. Meat mixture may be made up to 3 days ahead and stored in an airtight container in the refrigerator.
 
To make the tomato dressing, in a medium bowl, combine tomatoes (with their juices), oil, lime juice, salt and pepper. Dressing may be prepared up to 2 days ahead and stored in an airtight container in the refrigerator.
Place 2 cups of lettuce on each plate or in a lunch container. Top each serving with 1 cup of the beef mixture then sprinkle with 2 tablespoons of cheese.
 
Right before eating, pour a portion of the tomato mixture with the liquid on top of each salad, and crush tortilla chips on top.
